Bite into these golden fritters, symbols of conviviality and history. Stars of the West Indies, savor the accras also known as salt fish fritters during your trip. Can't wait to try them? Why don't you make them yourself at home ? 1. Desalt 200g of codfish for about 1h30, drain and shred it. 2. Mix codfish, garlic, lime, civet, shallots, spices, pepper and parsley. 3. Add 200g of flour, yeast and water for a homogeneous dough. 4. Fry small spoonful of dough in hot oil until golden brown. Enjoy !

This weekend, the Guadeloupe Islands welcomed a very special guest: the Olympic flame, carried by one of the archipelago’s greatest champions, three-time Olympic champion Marie-José PEREC.
The islands vibrated with celebrations and parades throughout the weekend, all in the rhythm of the flame.
Hosting the Olympic flame was a great honor for the Guadeloupe Islands, known as the "Land of Champions," and home to many world-class athletes.
