Well if you’re in Brisbane like I am, it’s been a crazy week. Our house wasn’t flooded but so many we know have been affected.
And I know the devastation extends all through southeast Qld and northern NSW.
How is everyone? Are you getting the support you need?

Workshop yesterday=baking today!
This is a garlic and parmesan pull apart.
Just stretched the dough out, covered with minced garlic and grated parmesan, rolled, chopped, baked in the steam oven on bread setting.
All set for lunch with a roast chook and salad😃

Love a rustic baguette!
These are Mauri victory flour and wholemeal spelt (50:50) with 70% hydration

Pretty happy with how the baguettes turned out.
I used my usual recipe with Mauri Victory flour. Autolysed (pre-soaked) the flour and water before adding starter and salt.
Shaped with inspiration from this video.

Christmas baking!
Focaccia and a white loaf. Higher hydration than usual- 1:1 flour:water but then added a bit more flour because it was too wet.
Not my kitchen or oven but turned out well😊
