👉 Vietnamese Wing Smash-It Plate

• 375ml coconut water
• Our Pho'k You Signature Rub
• 1 tbspn ginger
• 1 tbspn garlic
• 2 tspn fish sauce
• sq**rt of lime juice
• 1/4 cup brown sugar

Shove it in a little pot. Stir for a few minutes over med-high heat until the sugar dissolves. Crank it up to a boil until the glass thickens. Cover 1.5kg of wings with the glaze (keep some aside for that finishing chefs kiss touch).
Cook however you want, but we used the trusty Weber kettle with lump charcoal and apple chips at 140-150°C for 45 minutes, turning around half way through.

As the owner/operator/do-er of all things, I've had to make the seriously hard decision to temporarily shut down.

Unfortunately, we're not doing so great, and with only 2 sales since Christmas, it's costing far too much to stay open. This, along with my high-volume day job, is solely the reason, and when things die down a bit we WILL be back, so think of this more as a hiatus while I sort some s**t out 😅
