Reposted from Pick up these lamb shanks. Coated in the delicious “Lamb Love Rub”. Smoked over “Pecan” with charcoal, bought from in Canberra.

Smoked in the UDS for 2.5hrs then into a tray with veggies and herbs from the garden and a big splash of red wine. The whole lot covered in foil, then back into the smoker for another 2.5hrs.

Served on garlic mash with veggies. Dinner’s ready!🤤🤤🤤

Reposted from Cranked out a few Chicken lollipops for lunch and they were delicious.

This is the first time I’ve made chicken lollipops, however I’ve seen so many people make them, I wanted to have a go too.

Starting with the drumsticks, I “frenched” them - the meat at the top of the drumstick (where you would hold if eating it by hand) is cut around the bone and the meat and skin pushed down to create the “lollipop” look. The left over skin and knuckle is then completely removed.

There is a small bone that runs along the side of the leg and this was also removed.

To ensure the lollipop sat up straight, I also sliced the cartilage horizontal to the leg bone.

I seasoned the lollipops with “Gobble Rub” which gave it a sweet and smokey flavour.

The UDS was preheated to 135ºC / 275 ºF. The lollipops were smoked for approx 2 hours when the internal temp was checked using my IHT-1P digital thermometer. At 75ºC / 167 ºF I dipped each lollipop into some pre-warmed .newcastlechillibros “Chilli BBQ Sauce” and put back into the UDS to continue to cook until internal temp of 80ºC / 176 ºF and to set the sauce.

The result was a sweet and spicy chicken lollipop that had a nice bite to it and quite delicious. 🤤🤤

The whole cook was too easy on the UDS 👍🏻
