Meet Brandon!

My love of cocktails really developed in lockdown however my passions within the cocktail world come from my pre existing love of cooking. This passion continues in the cocktail world with fun and delicious flavour combinations, taking any excuse to experiment with house made syrups and garnishes to really construct delicious and unique drinks before even getting to the alcohol side of things in some cases.

This passion paired with a love of working with and around people in busy, high flow bars has me so excited to be a part in launching Pocket Ace Bartending 2.0 !!!

WE ARE BACK!! Pocket Ace Bartending 2.0 has been in the works for a hot minute now and WE are so excited to be bringing Rockhampton and surrounding areas a pop up cocktail bar like no other!! Bookings will be opening soon but for now please meet the team!! 😍😍

Meet Liam!

My passion for cocktails essentially started as soon as I turned 18. Like Brandon, it was definitely fueled by my love of food and the potential to blur the line between the two, but has also progressed through my interest in alcohol production. My main love is tequila and mezcal alongside the many different types of citrus, if you see a margarita or paloma I'll probably and hopefully be close by!

The potential to introduce people to new flavours and experiences across many different venues, all while creating new connections and experiences for myself has me pumped to be a part of launching Pocket Ace Bartending 2.0 !!!

Played around some espresso martini variations today!! Cinnamon, Irish Cream and the default Espresso Martini’s for all coffee lovers to enjoy 😍😍

Got to make up some cocktails, pour some wines and crack beers for the opening night of our brand new museum!!

Bacon Fat Washed Old Fashioned 🤤🤤 A 24 hour process but the result is a delicious, rich, decedent, smokey bacon flavoured bourbon to play with!

Played around with the classic Vodka Lemon Lime & Bitters today!! Martini and Tiki takes on the classic.

It is so appreciated and motivating to be the best we can be so with this I am taking a small break due to a bit going on in the real world for me. Something different this weekend! Teamed up with local talent to cater for a Japanese themed dinner party 💕 Pairing cocktails to a beautiful menu was a dream.

March is shaping up to be an early fully booked out month for the weekends! Thank you so much to everyone who has enquired so far, I still have some spots for Feb and would love to squeeze some more dates in March where possible so send me an enquiry today and we can make this happen! 💕

So while making a Mocktail menu for an event we created this absolute gem that would go incredibly with some gin one day! House made strawberry purée, vanilla sugar syrup, lime juice shaken and topped with sparkling apple juice. This may be one of the new favourites..

Next weekends event is a 100% MOCKTAIL built menu so today we are trialing a non alcoholic bubble gum, coconut, pineapple martini garnished with cream and some sprinkles because ofcourse!

Not only do we provide all Glassware for all drink needs but all glassware is Unbreakable Polysafe.

Mojito prep for an Event this weekend! When preparing dehydrated garnishes the sugar syrup left over from the soak turns into a lovely citrus sugar syrup perfectly matched with a sweet Lemon Lime Bitters and of course Mojitos!
