Plantagenet Pork Korean BBQ Belly Skewers with Pineapple Salad and Tamarind Dressing

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

For the meat:
- 2 packs Plantagenet Pork Korean BBQ Belly Skewers
- 4 tbsp vegetable oil (peanut or sunflower)
- 2 limes, halved
- Salt or fish sauce to taste

For the dressing:
- 4 tbsp grapeseed oil
- 3 tbsp red wine vinegar
- 1 tsp toasted sesame oil
- 1 tbsp ginger, finely minced
- 2 tsp tamarind paste
- ½-1 tsp caster sugar
- Pinch of coarse sea salt

𝗧𝗼 𝗰𝗼𝗼𝗸 𝘁𝗵𝗲 𝘀𝗸𝗲𝘄𝗲𝗿𝘀:
1: Pre-heat BBQ or Grill.
2: Lightly oil the skewers on both sides.
3: Place skewers on hot grill for 30 seconds and turn grill down to medium heat.
4: After a further 2-3 minutes flip skewers to cook on the opposite side.
5: Rotate each side for a further 2 ½ minutes.
6: Close lid and continue cooking until caramelised and the pork is cooked through.
7: Squeeze lime juice over the skewers while still on the BBQ.
8: Season with salt or fish sauce.

𝗧𝗼 𝗺𝗮𝗸𝗲 𝘁𝗵𝗲 𝗱𝗿𝗲𝘀𝘀𝗶𝗻𝗴:
Combine all ingredients in a jar with a tightly fitting lid. Shake to combine flavours. The combination of lime and tamarind makes this dressing quite tart. Perfect to offset the sweetness of the pineapple. Taste the dressing for sweetness, add a little more caster sugar if needed.
