On a recent trip to the coast I thought, wouldnโ€™t it be fun to run a wholefood plant-based cafe by the sea? Just me and Hugo, living the simple life ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ๐Ÿถ far far away from the city lights ๐ŸŒƒ

Traveling down that train of thought I began to think of menu items, and one of them is tonightโ€™s dinner.

I present to you, Burrito Bowl a la Cafe Hugo.

- lettuce, cucumber, Spanish olive salad topped with tomato, onion, coriander, dill, lime salsa
- mixed grain rice
- jackfruit and azuki bean chilli sin carne
- spiced tofu tempeh strips baked till crisp
- with a side of air fried tortilla chips

Waffles! Is there another word in the English language that can inspire so much joy? Crumpets, maybe.

This is a โ€˜recipeโ€™ for a super easy GF, vegan, no-recipe waffle mix which I keep on hand, to make waffles whenever inspiration strikes. Invest in a good quality waffle iron- I bought mine from during the last lockdown.

In a large glass jar, add equal parts buckwheat flour and green banana flour till about 2/3 full. Add approximate amounts of: 1 tablespoon baking powder, 1 teaspoon sea salt, 2 tablespoons brown sugar, 1 teaspoon ground wattle seeds, 1/2 teaspoon vanilla powder, 2 tablespoon chia seeds. Stir with a spoon to combine, then close the lid and shake the whole jar vigorously for a minute.

To make waffles, simply measure out some of the above mix, add enough milk to create a pancakey batter and whisk well. Add a smidge of oil and leave to sit for 5 minutes.

Thatโ€™s it!!

I like mine topped with fresh seasonal fruit and some excellent maple syrup.

Buckwheat is an excellent source of minerals and essential amino acids, and green banana flour is chock full of resistant starch which keeps your gut healthy. Win win!

๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ Baked Kimchi Fried Rice

I have been cooking up a storm lately, as I found myself suddenly with a lot of free time on my hands thanks to a string of cancelled holidays. Out of the many new recipes I have been testing, this recipe is a revelation - oven baked โ€˜friedโ€™ rice! So easy, and healthier than the wok fried original as it is uses much less oil.

Preheat oven to 200C.
In a medium sized baking tray or cast iron casserole pan, add 1.5 cups medium or long grain white rice, 2 cups veg stock, 1 cup chopped kimchi, 1 cup chopped onion, 1 cup chopped celery (or carrot, peas or corn), 1 tablespoon cooking sake, 1 tablespoon shoyu or tamari, 1 tablespoon fish sauce and 1 tablespoon Korean chilli powder. Stir well to combine. Cover and bake for 45 mins. Remove from oven, and scatter two cups of chopped spiced tofu and thinly sliced long green chilies. Do not stir, place back in the oven, uncovered, for 15 minutes. Remove from oven, and allow to rest, covered, for 10 minutes. Remove lid, drizzle with a generous amount of toasted sesame oil and chopped spring onions. Stir through to combine well and enjoy!

This recipe makes enough for four hungry adults, and we had it with a side of pickled celery and cucumber salad tonight, but a fried egg on top would work well too.

Yes I have succumbed to the lure of bread baking in my iso-desperation. ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ๐Ÿฅ–

After a failed attempt to start my own sourdough culture, I decided to try an easy, overnight spelt bread recipe that uses only 4 ingredients and kinda sorta looks like a real sourdough.

Try it, itโ€™s really fun- the only special โ€˜equipmentโ€™ you need is a cast iron Dutch oven like

Ingredients
500g whole meal spelt flour
2 teaspoons sea salt
1/4 teaspoon yeast
2 cups room temperature water

Instructions
The night before, combine all dry ingredients in a big bowl. Stir in the water in small amounts, using a silicone spatula, mixing as you go. You may need more or less water depending on the flour you are using- but you should end up with a fairly sticky looking dough. No need to mix or knead. Cover the bowl and leave to proof overnight, for 12-16 hours.
In the morning, preheat the oven to 230 degrees, with a Dutch oven inside.
Using a silicone spatula, fold the raised dough over on itself a few times, and tip it out onto a piece of baking paper on your counter. Dust the top lightly with flour and cover with a tea towel and let it proof while the oven warms up- at least 30 minutes.
Take the whole thing - baking paper and all, and place in the hot Dutch oven and bake, with lid on, for 30 minutes.
Reduce heat to 200 and bake, uncovered for 15-25 minutes.
Let the bread cool completely before slicing and eating!๐Ÿ’ฅ

Yes, they are both delicious salty goodness, a.k.a. soy sauce. But wait, there's more...โ €โ €โ €โ €โ €โ €โ €โ €โ €

Traditional shoyu is made with whole wheat, soybeans and sea salt, which are naturally fermented with the spores of Aspergillus over many months in wooden casks. It has a complex, umami-rich flavour to dishes, and general yumminess to everything. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €
In contrast, what is commonly sold as soy sauce in supermarkets is made using hexane-defatted soybean meal and sodium benzoate as preservative, using accelerated methods and temperature-controlled fermentation in stainless steel or fibre glass tanks. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €
The end result is a far inferior product that lacks the complexity and depth of shoyu. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €
Unless you have Coeliacโ€™s disease, there is no need to avoid shoyu in cooking even if you are normally sensitive to gluten. Tamari is often used as a gluten-free substitute for shoyu, and it is traditionally made by collecting the dark liquid that pooled on the surface of fermenting miso. As tamariโ€™s flavour comes from amino acids, it is used for dishes that require longer cooking at high temperatures, such as baking and long-simmering. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €
Shoyu on the other hand, owes much of its flavour to natural alcohol produced by wheat fermentation, so it is used to flavour dishes at the end, or almost the end of the cooking process, or served at the table as a condiment next to the finished dish. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €

Naturally fermented miso, made from soy beans, has traditionally been used to support healthy digestive and immune function thanks to the beneficial bacteria and enzymes. When making miso soup, add the paste at the end of cooking and never boil the soup, as this kills the beneficial bacteria. โ €โ €โ €โ €โ €โ €โ €โ €โ €

In addition, genistein, an isoflavone found in soybeans has shown impressive anti-cancer activities in in-vitro and animal studies. Levels of genistein are generally higher in fermented soy products compared to unfermented soybeans. โ €โ €โ €โ €โ €โ €โ €โ €โ €

I always use organic or brown rice miso paste at home. It's super easy to make, and sometimes when I'm feeling lazy I make it by adding miso paste to a simple vegetable broth.โ €โ €โ €โ €โ €โ €โ €โ €โ €

Whilst I follow the broad brushstrokes of the macrobiotic tradition, I don't adhere strictly to its prescribed rules. (Because there. ARE. SO. MANY. RULES.) Flexibility, on the other hand, is a virtue I rate highly. โ €โ €โ €โ €โ €โ €โ €โ €โ €

On a daily basis, my food is largely plant-based, with lots of whole grains, vegetables, plant-based protein sources like tofu, tempeh, beans and lentils. I do better when I include some seafood from time to time. ๐Ÿฅฆ๐Ÿš๐ŸŸ โ €โ €โ €โ €โ €โ €โ €โ €โ €
โ €โ €โ €โ €โ €โ €โ €โ €โ €
But everyone is different. When your body and mind are truly integrated and thriving, you instinctively know what sort of foods work for you, and what doesn't. Some people thrive on wholly plant-based diets, others don't. ๐Ÿ•บ๐Ÿ™…๐Ÿปโ€โ™€๏ธโ €โ €โ €โ €โ €โ €โ €โ €โ €

The reason why many people cannot tolerate certain plant-based foods such as grains, beans, legumes and high FODMAPs food is likely to be poor gut function, such as low stomach acid, dysbiosis, increased intestinal permeability, SIBO and more. ๐Ÿ’ฉโ˜ ๏ธโ €โ €โ €โ €โ €โ €โ €โ €โ €

โœ… Chew your food well, so that you are properly digesting and absorbing all the complex carbohydrates you are eating. โ €โ €โ €โ €โ €โ €โ €โ €โ €
โœ… Do not fall for the temptation of artificial sweeteners. The sweet taste still stimulates an insulin response, and you may end up with worse sugar cravings than before!โ €โ €โ €โ €โ €โ €โ €โ €โ €

Traditionally, winter has been considered a time of rest, meditation, refining spiritual essence, and storing physical energy, in the form of a little added weight. So the extra padding you have gained over winter is perfectly normal. Phew. ๐Ÿ˜โ €โ €โ €โ €โ €โ €โ €โ €โ €

Key foods to eat during this season are hearty soups, warming grains such as buckwheat, roasted nuts, and it is the best time to eat a little more animal products such as meat and seafood, if you are not 100% plant-based. Use warming spices such as ginger, cinnamon, garlic, and vegetables in the onion family liberally, and avoid raw foods and too much fruit. ๐Ÿฒโ˜•๏ธโ €โ €โ €โ €โ €โ €โ €โ €โ €

๐Ÿ’ซ My absolute favorite tea, which I drink day and night, during all seasons and for all occasions, is bancha. Bancha has several meanings, but the kind I prefer is actually kuki hojicha (or sometimes just called kukicha) which is made from roasted stems and twigs of the green tea plant. It has a mild, toasty flavor and doesnโ€™t have the astringency that you find in regular green tea, which comes from the tannins.

๐ŸŒŸ It is very low in caffeine so can be had at any time of the day, helps with digestion of food so itโ€™s a good accompaniment to meals. You can typically get up to 3 infusions from the same teapot.

๐Ÿ› I buy mine directly from a centuries old Japanese tea shop in Kyoto via their website, but if you are not that hardcore, look out for health food stores and stores selling kukicha.
