“This dish (Braised green beans and samphire) is one of my go-tos for a perfect side for lamb or any grilled fish during the summer holidays! It’s slightly briny and super savoury. Make a bunch and keep it in the fridge for a cold pick-me-up when snacking."

How’s this little day-old cutie from Drysdale Cheeses ! You just have to visit thier page to see how much they love their gorgeous goats.

Here is a look how they are environmentally conscious.

🌱 The distance from dairy to cheese vat is a mere 20m.

🌱 Paper wrapping and compostable vacuum bags make up their environmentally thoughtful packaging!

🌱 A nearby distillery supplies spent juniper berries that they incorporate into a semi hard Tome-style cheese.

🌱 They use a steam cleaner to sanitise the cheese room.

And they make damn tasty cheese too!

Skycity's Minimal-Waste Rooftop Bar and Restaurant Is Using Only South Australian Ingredients Chef Kane Pollard is reducing waste with innovations such as tomato skin “paprika”, apple core “flour” and celeriac-skin treacle, plus sorbets and ice creams created from vegetable by-products.

A solar evaporation method is to thank for Olsson's Sea Salt high quality. The seawater evaporates in successive ponds until the seawater is fully concentrated and the salt then crystallises on the floor of the pond. It is then scooped up, washed in seawater, dried and packaged.

That's it.

There are no chemical processes involved making Ollsson’s Salt perfectly natural. 🐳

The seawater is sourced from two of the world's most pristine oceans: The Great Barrier Reef (Port Alma, QLD) and The Great Australian Bight (Whyalla, SA).

Schulz Organic Dairy impressively has been using biodynamic and organic principles since 1972!

🌱 Their Milk is processed a mere 100m from the dairy. Talk about a small carbon footprint!

🌱 Pure, simple and delicious Friesian and Jersey Cow all natural full cream milk with no additives

🌱 No chemicals, hormones, herbicides or pesticides are used on the farm.

🌱 Self-sufficient system through crop rotation and farm composts.

Very impressive results for an 832 acre property!

Bred Winner Honest Eggs Co. is on a mission to change the egg industry for the better. Here is a sneak peak at some of their amazing achievements so far.

🌱 Limit of 30 hens per hectare, government free range regulation is a whopping 10,00 per hectare and CSIRO recommend 1,500.

🌱 They use plant based stickers and ink, making their packaging 100% compostable

🌱 All packaging cardboard is sourced within Australia.

🌱 Mobile hen houses allow regular paddock rotation helping regenerate pasture and prevent disease.

🌱 Their next project is to become Australia’s first BCorp Certified egg company

Wild Harvested Winner Gazander Oysters have some pretty cool sustainable practices in place.
Check this out!

🌱 Over harvesting prevention through oyster biomass management.

🌱 Fully solar powered facility and they have introduced hybrid vehicles.

🌱 They have a bio friendly toilet system.

🌱 When their plastic baskets reach the end of their reusable lifespan they repurpose them through a pelleting process.

🌱 Their packaging uses biodegradable foam replacement cardboard and minimal plastic.

So many wonderful things are happening in Australia around sustainability in hospitality. Here’s a snapshot of what Red Meat winner Cherry Tree Organics is up to!

🌱 They will be carbon neutral in January 2022

🌱 Certified organic for 20 years – that's an impressive time without chemical fertilizers, herbicides or pesticides.

🌱 Over the last five years they have followed an Emissions Management Plan through working with Carbon Farmers Australia.

🌱 The farm is entirely self- sufficient with water, from a large onsite dam and rainwater tanks.

🌱 Reintroduced native vegetation 20 years ago and still doing so to encourage biodiversity and encourage wildlife.
