Although it sounds obvious don’t run around with a sharp knife in your hand, don’t point a knife at anyone and always cut away from yourself not towards yourself. Also, don’t use your finger to see how sharp the blade is. Yes, I know some of you reading this article have been guilty of this at least once and have found out that the edge of the knife was indeed very sharp because you cut yourself on it!

The Biggest Threat to Japanese and German Knives

In Japan cutlery is a very big business and so the tradition of knife making in Japan is unsurpassed. There is no denying that when it comes to tradition. Japanese I've got it down the second thing is quality now you know the Japanese are perfectionist everything from their food to their cutlery to their clothes they are perfectionists. I've had the great privilege to have been invited to Japan to travel through and meet some of the best knife makers in all of Japan. I am going back to Japan by the way so I'm going to Osaka this time and I'll be spending time in Kyoto Sakai and KO Bay to meet some knife makers out there. I'll keep you guys posted when the time comes when I've traveled through these factories and these facilities and I'm watching either an artisan make a knife we're you know one person will make three or four knives in a single day to a factory where they will put out as many as five hundred to a thousand knives in a single day.

The knife is the most important tool that a chef uses. A chef’s knife is the most versatile knife in the kitchen if you have to buy one knife make it a chef’s knife.

First, let’s talk about steel this knife here is Japanese made in a western-style you can see it has a lot of similarities to the Wusthof here which is German made. The big difference between these two is that this knife is made of carbon steel a high carbon steel not stainless steel this knife will react with the environment so it will patina and darken over time and potentially rust as well.

The patina on this steel right here is from six or seven years of use in a professional kitchen whereas the stainless steel knife won’t patina or rust over time in most normal circumstances. The reason you might choose a carbon steel knife carbon steel is easier to resharpen and many people myself included prefer the aesthetics of a knife that adapts to its environment over time.
