SMOOTHIE BOWL W/ HOMEMADE CHOC GRANOLA

A snack/meal you can enjoy anytime of the day or night, this one tastes just like an açai bowl! (Without all the extra sugar and sweeteners that cafes add)

Smoothie bowl:
1/2-1 frozen banana
1 cup frozen berries
Handful of baby spinach
1 tsp chia seeds
1 tbls spoon coconut (for topping)
1 tbls peanut butter (for topping)
1/2 cup filtered water (add less if you want it to be a thicker consistency)

Blend all ingredients in a blender and serve in a bowl. Top with coconut, peanut butter and my choc granola (recipe on my instagram stories/highlights)

SPINACH & FETA ROLLS

Ingredients:
250g baby spinach, chopped.
200g feta, chopped into small squares.
1 brown onion & 2 garlic gloves, fried.
1 shallot stalk, chopped into small pieces.
Salt and pepper
1-2 tbls dried basil or mixed herbs
2 sheets of puff pastry (or any kind of pastry)
1 egg or flax egg (optional)

Method:
-Fry the onion and garlic. Once done, add the spinach to wilt.
-Combine all ingredients in a large bowl.
-Cut each piece of puff pastry in half and brush egg on each.
-Place a handful of mixture into the centre of the puff pastry and spread to the edges.
-Fold the bottom 1/3 of the pastry on top of the mixture with a little egg to keep it together.
-Repeat with the top 1/3 of pastry.
-Cut in half and place on a baking tray at 200 degrees for 20min or until golden brown.

The past 27 weeks of Working from Home have been nothing short of amazing (a few pics from my travels this year), so grateful I could focus 100% on my health and healing my body and rid symptoms of PCOS🥰 I never knew what it felt like to have so much energy and live a ‘normal’ day like most people take for granted! My workload is still high but I barely get stressed anymore and if I do- I go for a short walk😅 Health is my priority and there would be no point working if I couldn’t take care of myself. Glad I have the BEST BOSS ever and a job that takes care of me very well💁🏽‍♀️ Cheers to what has so far been the best year yet for me personally and professionally and looking forward to what the next 6 months hold for me😇🍃 @ Byron Bay, New South Wales

REFINED SUGAR FREE, VEGAN CHOCOLATE MOUSSE😍

Was craving a sweet snack and blended some ingredients together and made the best chocolate mousse👏🏼

Ingredients:
12 dates (I soaked mine in boiling water and left them overnight) drained.
2 tbls organic peanut butter
2 tbls cacao powder
1 tsp desiccated coconut to top if wanted.
1/4 cup water
1 tsp Himalayan salt

Blend everything together and serve✨ a delicious and nutritious dessert!

PCOS & ACNE BEFORE AND AFTER🙈

I think it was October 2018 when I went to the Doctor saying I wanted to finally go on Roaccutane for my Acne. Then I was referred to a Dermatologist and as soon as she saw my face she was convinced I may have PCOS. “PC what?” I had no idea what this ‘modern’ illness was. Polycystic Ovarian Syndrome. I went on to get what seemed like 100 more tests/scans/Specialist visits in the course of over a year. It was a start and ALOT of money.

I had/still have a full time client facing job so everyday was a struggle to go to work with a face full of the worst Acne and the symptoms to go with it- fatigue (Come 2pm I was ready for bed and 7am starts I was half asleep😅) nausea, brain fog, being sick at work or having to take more sick days than I should! And pretending and putting on a smile that I felt GREAT🤦🏽‍♀️

Early this year I thought there needs to be another way, I was on a work trip in America and as soon as I came back to Australia, I cancelled all my prescriptions and stopped taking medication-🎉🎉🎉🎉🎉🎉🎉🎉The medication only made my acne worse and my symptoms heightened.
It was time for me to HEAL NATURALLY!🥳👏🏼🍃

I started eating mostly organic whole foods, drinking celery juice and I reduced my stress dramatically! I cut out most Dairy and Gluten too which is a big help! My mindset changed, I was ready to take charge and heal myself holistically- I didn’t need a ‘Doctor’ to tell me what she thought was best when in fact it was damaging my health even more(so thankful I did my own research) and said Goodbye👋🏻

I removed all toxic products from my home- coffee (I never knew how bad it is for us!!) makeup, deodorant, cleaning supplies, laundry supplies, perfume, shower products, shampoo etc. I replaced all these with natural products or don’t use them at all (makeup and perfume).

Your environment also plays a big part in your health, so I go outside and ground myself most days and let go of what I can’t control - especially with a high workload I needed to find balance and quickly! I mostly have balance and very thankful I’ve been able to WFH over the past 6 months and focus on my health.

Today I feel CONTINUED...⬇️

EASIEST HOT CHOCOLATE EVER!

Back in the day I used to have tinned Nesquik or Milo, which was filled with sugar, glad I grew out of that.
Then I started to have the ‘sugar free’ hot chocolate which was low in calories but probably filled with nasty sweeteners.

Now I make my own hot chocolate and it’s super delicious and easy!

Add 1 heaped teaspoon of cacao powder and 1 teaspoon of coconut sugar in a mug.
Add boiling water and it’s as easy as that!☕️
I personally add a little bit of cold water on top because I don’t know how some people drink a boiling hot drink!😅

BERRY GOOD SMOOTHIE😉🍓

Spring is here! My super easy smoothie recipe:

1 banana
1 cup of mixed berries (I use organic frozen strawberries, blueberries and blackberries)
1 cup water
1 tsp chia seeds
1 tsp coconut

Blend and serve🍌

RAINBOW VEGAN PAD THAI😍

I’m back! I spent a week in Byron Bay and had the mot amazing time exploring, enjoying the local food and plenty of organic markets! People are so much friendlier up there, happier and less stressed. Nothing was rushed, so many beaches to go to and no traffic = heaven!😍🌴

The past two weeks I’ve been eating no meat at all and mostly Vegan/plant based. I feel more focused, more energy, lighter, healthier and I don’t crave a burger or meat anymore! No idea if I’ll have a piece of meat again soon but I’m not looking for it right now.
This is the first time in my life I’ve gone without meat😨 Crazy how society and ads and doctors tell you to have meat because you need ‘protein’🤦🏽‍♀️ I’ve found I’m eating more protein than usual and a lot more veggies with so many nutrients!

I had this dish in a cafe the other day and tried to recreate it from the photos I took of it! Made a super delicious dressing to go on top and added tofu in.

I’m not a master of vegan foods so if you have any tips let me know!

Not a meal but a great snack option! 1 piece of bread (mine was spelt sourdough) with cashew spread, 1/2 avocado and a cherry tomato. Top with salt & pepper with a squeeze of lemon🍋

RESISTANCE BANDS:

Not a food post but I just bought the prettiest bands from today to use on my HIIT at home workouts!
They’re super thick and non-slip, I used them today and so far so good! I’ve been waiting months to buy some Instore and Kmart has a whole new range Instore.

If anyone knows me, knows that I love Kmart and basically shop there for everything, especially their clothes😍

POTATO & LEEK CURRY

I’ve never really made much Indian food but I really wanted to make roti bread and needed to experiment a curry to go with it!

Ingredients:
2 large potatoes
1 Leek
One handful of shallots
1 tbls garam masala
1 tbls curry powder
1 tsp cumin
1 tsp cinnamon
3 cups filtered water

Method:
-Cut the potatoes into small chunks.
-Chop the leek and shallots finely.
-Fry the leek and shallots in a pot with all the above spices.
-Add the potatoes to the pot and cover them in the spices.
-Add the water and leave to simmer until the potatoes are soft. Serve with my homemade roti bread on the previous post and enjoy!

Can even add chopped up cucumber with greek yogurt if you like a little something on the side.

WHOLEMEAL ROTI BREAD

Ingredients:
1 cup wholemeal plain flour
1 tsp oil
1 tsp salt
Water for kneading dough

Method:
Add the flour, oil and salt into a large bowl and mix together.
Gradually pour very small amounts of water into the mixture and it will start to form a dough consistency while you are kneading it.
You don’t want the dough to be very wet so add less water rather than more if you’re unsure. Set aside for 10min or more.
Separate the dough into 6 portions.
Roll each portion out with a rolling pin (or old glass jar) so they end up being circles.
Fry in a pan for 2min each side while pressing down the edges of each with tongs, this way the middle of the roti will start to ‘pop’.

4 Ingredient Choc Blueberry fudge cake

Okay this is by far the SWEETEST chocolate dessert I’ve made and refined sugar free, the sweetness comes from the fruit! Dessert is probably my favourite treat and this one is yet again guilt-free🙌🏼

Ingredients: (serves 2-4)
2 mashed bananas
3 heaped tblsp cacao powder
3 tblsp peanut butter
1/2 - 1 cup frozen blueberries or mixed berries!

Method:
Place all ingredients in a bowl and mix together.
Spoon the mixture in a muffin tray (silly me didn’t do this and used a baking tray instead🤦🏽‍♀️it’s been a long day😂)
Bake in the oven for 15min on 180 fan forced.

Super easy and used making staple items in my kitchen👩🏽‍🍳

SUGAR FREE, DAIRY FREE BANANA CAKE

Super easy recipe and delicious!

Ingredients:
3 mashed ripe bananas + 1 banana for topping
1 1/4 cup flour of your choice
2 1/2 teaspoon baking powder
1/8 cup sugar free maple syrup
1/2 cup almond milk
1 tbls peanut butter
Flax egg (mix 2 tbls flaxseed meal and 5 tbls water- let it sit for 5 min before adding into the mixture)

Method:
- Mix all ingredients into a bowl and place into a non stick cake tin!
- Place into an oven for 20-30min until golden brown.

Drizzle some honey over the top if you prefer it a little sweeter, and ensure you use very ripe bananas as they have much more flavour and act as a natural sweetener.

Welcome to my new followers!

Thought I’d share a bit about me: I work fulltime for a Tech company that’s based in the US, working from their Sydney, Australia office!

I started eating organic food off and on for the last 2 years but it wasn’t until I started working from home over the past 5 months that I now eat mainly organic food, I’d say around 90% at least.

I go to the organic farmers markets near my house once a week to buy all my fruit and vegetables and then stock up with organic frozen berries from the supermarket for my smoothies.

I’ve started back on my celery juicing, after buying a juicer last week and currently on day 5 of having a celery juice on an empty stomach each day!

I love the benefits of fasting each day and usually fast for around 15-20 hours. (The time from dinner to my next meal). It lets my body rest so it’s not always finding energy to digest, restores cells and leaves me with more energy believe it or not!

I stopped drinking coffee over 3 months ago and now just drink water, celery juice and herbal teas. I never drink alcohol and maybe a handful of times a year I’ll have a soft drink.

The reason I started eating organically and wholefoods, is to heal from PCOS. I was on prescriptions for my acne and various symptoms that come along with PCOS, but it wasn’t getting any better, if not worse! A few months after, I stopped taking all medication and chose to focus on my diet and living a non-toxic lifestyle (no harsh chemicals or sprays, no nasty deodorants, less stress etc, along with celery juicing ) i finally started to feel BETTER and have started to heal! I haven’t seen a doctor or specialist all year and never plan to again✨

I used to experience the worst bloating, fatigue, cramps, acne, feeling like I needed coffee to wake me up, stress, brain fog, all while working fulltime. Now just about all my symptoms have vanished or drastically improved since naturally changing my lifestyle and mindset, without any medication at all!

Food truly is medicine and has amazing benefits! I’ve started reading ‘Cleanse to Heal’ from which is amazing! I’m now 24 and never felt better👏🏼

HEALTHY TERIYAKI CHICKEN RECIPE:

I for one know when I used to go out and buy sushi that it was definitely not so healthy and you have no idea what goes into the sauces and marinades they use.

So my new favourite alternative is to make it myself!

Ingredients: (serves 2)
500g organic chicken thigh fillets
3 tbls Braggs natural soy sauce alternative
1 tbls organic honey
1-2 tbls oyster sauce (will be trying to find a better alternative as this is not the best!)
1 avocado
1 bunch of bok choy
1-2 cups of brown rice or rice of your choice

Method:
1.Add the soy sauce, oyster sauce and honey to the chicken and mix in a bowl. 2.Add the chicken to a pan and cook until golden.
3.Pour 4 cups of filtered water into a pot along with the 2 cups of rice- cook until your desired texture.
4.Place a sieve/sifter over the top of the rice pot and place the bok choy on it- only takes 1-2 min to cook bok choy. Remove once cooked.
5.Chop the avocado up until strips.
6.Remove chicken and rice once cooked and Voila! Time to eat🥑

PURPLE SMOOTHIE BOWL: For dessert tonight I’ve opted for a smoothie bowl.

Ingredients:
-1/2 banana
-1/2 cup blueberries (filled with antioxidants and super low calorie!)
-1/2 handful of spinach
-1/2 cup of unsweetened almond milk
-chia seeds

Pour into container and blend until smooth! Top with your choice of toppings, I’ve sprinkled coconut and chia seeds.

A super easy and healthy dessert!

ORGANIC MARKETS: So a few weeks ago I stumbled across organic markets while on my lunch break, it’s the best! It’s in the Bondi area for anyone who’s looking for them and on every Thursday and Friday! My new local, I carry my Nimbin organic bag with me and pack everything into it so I use minimal plastic.

HEALTHY BANANA MUFFINS: Finally have some time to bake and made some delicious muffins. Haven’t perfected the recipe yet so will share at a later date.

Too much added sugar in your diet can lead to inflammation in your body, so no added white or coconut sugar in my recipes ever! It’s just not needed. If you compare the nutritional information against white sugar and coconut sugar, you’ll soon realise that coconut sugar really does not have great benefits -I think it’s all a marketing fad! You’re lead to believe that because it’s called ‘coconut’ that you associate it with healthy food. Have a look on the back of the pack and realise there are so many more beneficial sweeteners to use in your recipes instead: honey, maple syrup or agave syrup. It’s all about experimenting and seeing what works for you and your body. That’s not to say I never consume sugar, but it’s more of a treat for me, I won’t go to a cafe or restaurant and order dessert regularly as I don’t know what ingredients they have in there, I much rather cook and bake my own - and it tastes delicious!

In my element, outdoors and amongst greenery! Took a visit to my hometown of Wagga Wagga and the Animal park was closed but that didn’t stop me from exploring the grounds and going on the bush walks around the gardens!🌿
