Davo Plum Colada.
Fill a cocktail shaker with ice and pour in 45 mL Davo Plum Aperitivo Bitters, 45 mL white rum, 90 mL pineapple juice, 30 mL coconut cream and 15 mL fresh lime juice. Shake, then pour into a cocktail glass and garnish with Davidson plum powder.

Place two scoops of lemon gelato in a bowl or blender and pour over 30 mL Bitter Limoncello and 60 mL Processo. Whisk or blend until smooth. Pour into a wine glass and garnish with lemon zest.

Peppermint Gum and Pomegranate Mule.
Fill a cocktail shaker with ice and pour in 45 mL Peppermint Gum Gin, 80 mL pomegranate juice and 20 mL fresh lime juice. Shake, then strain into a highball glass filled with ice, top with 150 mL ginger beer and garnish with pomegranate arils, lime wedges and mint leaves.

Quandong Gin and Peppermint Gum Gin.
Our Quandong Gin is made by distilling quandong (a native Australian peach grown in the arid regions of Victoria and South Australia) with juniper, citrus and Tasmanian Pepperberry to create a gin that is bursting with tart, woody and peachy flavours. Further maceration of the spirit with quandong and a nice long rest creates a brilliant amber coloured gin with a subtle spice.
Our Peppermint Gum Gin balances eucalyptus and mint from native peppermint gum, with the heat of Tasmanian Pepperberry and bright lemon myrtle to deliver a fragrant and refreshing gin that is evocative of the Australian bush.

There are absolutely zero artificial colours or flavours used in our products. The colours you see and the flavours you taste come straight from the ingredients themselves, with our aperitifs, liqueurs and spirits made using leaves, berries, fruits and seeds in their whole and natural forms.
It’s for this reason that you may notice some seasonal variations or some natural sediment in your bottle.

Pour 10 mL Autonomy x Coffee Liqueur into a shot glass. Slowly pour 10 mL Baileys over the Coffee Liqueur (it will sink!), then slowly pour 10 mL Orange Liqueur over the top to create three separate layers.
You can throw it back if you really want to, but it’s pretty damn good sipped slowly too!

Back in the 18th century, British sailors apparently used to test the strength of their rum by pouring it over gunpowder and then taking a match to it. If it ignited, it was “proof” that the rum was strong enough for their liking (or above 100 proof - roughly 50% ABV).
