Low in salt and high in olive oil the ciabatta is one of my current favourites at the bakery.

Sweetwheat almond croissants are now soaked in a spiced rum syrup made using rum from my friends at . With notes of vanilla, orange and cinnamon it gives the twice baked croissants a nice warmth and depth of flavour.
As much as I miss going to farmers markets I do love the efficiency of pre orders and delivery. The exact amount of bread needed can be made with no excess or waste.

9 day old chocolatine. Not quite as crispy or flakey as it was on the day it was baked but still good in my opinion. Always amazed by the keeping qualities of naturally leavened pastries.
