The word bespoke itself is derived from the verb to bespeak, to "speak for something", in the specialized meaning "to give order for it to be made".

Many people wonder what goes into a cake, and the short answer is, well...it varies! I can tell you what goes into mine though. From Madagascan vanilla beans, Belgium couverture chocolate, free range eggs, Danish butter, Dutch cocoa..it's a real travel around the globe for the best ingredients. This.. so much prettiness! Inspired by the flower wall designs, this upright rectangle cake was a canvas for the divine florals from my favourite . The cake itself was a dark chocolate mud cake with chocolate ganache, but here's the kicker.. we had whole maltesers between the layers which lent a little theatre to the serving! Pink, white and lilac watercolour ganache finish with splatters of rose gold. The wonderful was able to customise the toppers for us in a rose gold mirror finish.

Adore this style and adore this family. This was inspired by and her amazing talent. Taking a royal blue hue to match the special young man's Confirmation outfit, the ruffles added a masculine touch while the gold added a little lux. Custom cookies and my muse. Colour inspiration from this artwork, with customisation of names in Armenian. Loved the colours of this, so soft and delicate. Finished off with a little edible 24k gold leaf.

If you know, you know. Armenian Soujouk is a sweet delicacy that can be found in abundance throughout the country. Seeing as I won't be visiting any time soon, I thought I'd try bringing the Armenian street food to my kitchen. These are strung walnuts coated in a grape jelly, hung up to dry for days. Lets hope they turn out!

And a cake to match. Fully hand cut logo for the Carlton Blues. Whilst it looks pretty simple, getting the exact placement and adherence to the spacing was a challenge. Colour created using a mix of oil and gel based coloured fondant with an airbrushed overlay for depth.

Another lockdown, another bench full of finished cakes not going to their parties. While I love the creative process, it has been an incredible burden this last 18 months. I have refunded every single order that was cancelled at the last minute, and have even rebaked and remade orders at my own expense for those same rescheduled parties. I am the point where if I am to continue the cycle, I need to order more bulk stock, which I won’t be doing. I’m not prepared to source new brands and risk the quality of my products. This means, that moving forward, I will no longer be taking orders for the foreseeable future. I will honour those that I can fulfill with whatever perishable stock I have left, however once it’s gone, it’s gone. I hope you understand.

This is for all the Clone Wars and Star Wars fans. Phase 2 Captain Rex helmet fully edible. I will admit, there was more research jnto this than I care to calculate, but thats what makes the end result so realistic. This is a full size replica and instantly recognisable if you are familiar. Fondant covered base, airbrushed white and aged back to base. Airbrushed blue detailing with further scuffing. Weld marks are painted aged edible silver, while all shadowing was again airbrushed. Its "seeker" (antennae to the rest of us) was hand shaped also. Hand carved signature cherry ripe mud cake covered in rich raspberry chocolate ganache.. our cakes taste as good as they look 😋.. I may need to keep a few more pics of this, the photos don't do it justice. This was a cake for my owns sons party, which unfortunately was cancelled due to a snap lockdown 😭😭😭

Camo and ammunition. Based on a design provided by the client, we were able to hand model the fully edible gr***de that sits atop this camo styled design. 37 individually made bullets sit around the base while dog tags spell out the birthday message. 3 extended tiers of bliss. Ombre ruffles edges in gold, hessian wrapped muddle tier and Swiss dot on a blue base. Loved the elegance of this one, and the addition of the gold topper at the venue was all it needed. Lemon blueberry mud and Neapolitan mud cake.

What an honour to make this cake for an incredibly talented 18 year old! Tom is the amazing artist who painted the original version of the artwork adorning the top of this cake. It will soon be on display as part of the Top Arts exhibition at NGV. What an achievement. So celebrate a milestone birthday and this incredible achievement, we turned his art into edible art, displayed atop a marbled and gold plinth cake. All accessories handmade in sugar.

Ps: the stuff on the board is not ooze.. its the gold dust I used on the actual gingerbread cookie walls..yes, they're gold!

Class of 2020.. isn't that going to be one that goes down in the history books!! One we had to pivot and learn on the fly. One where every aspect of our lives was re-evaluated. But we got there in the end. And for this group of students finishing off their primary years and about to embark on the adventure of secondary school, the end of the year should be one of celebration and triumph. 105 individually wrapped gift cookie packs went into the take home bags for our local school, for the students to enjoy at home with their families while watching the screening of their graduation ceremony. Custom made de-bossed design, with a one off design made specifically for this project. Thankyou to a dear friend for the negative stamp. Time to celebrate the end of an unforgettable year!! Cheers to you, Class of 2020.

The Child, aka Baby Yoda. Loved making this one.. fully suspended pod housing a baby Yoda all snug in his bed. Pod is milk chocolate mud cake, with sugar paste canopy and detailing. Airbrushed finish with aged effect. Baby Yoda himself is fully edible, made of modelling chocolate. Hand painted to get into all the little nooks and crannies. A labour of love, which you can tell from the fabric covered base board.. I just ran out of stamina at the end!! Being that it's was a family cake, I was forgiven this time 😉

Harry Potter for Ruby! When making a themed cake for an enthusiast, all the details must be perfect.. and since I have my own in-house expert, he certainly kept me on my toes. Everything is hand modelled and hand cut. The owl took way longer than it should have, being modelled out of one piece of sugar paste. We hope you had an amazing birthday Ruby!

Wheras I dont share political posts on my insta, today, I can't help but feel sorrow and sadness for my brothers and sisters in my Fatherland. Being of Armenian ancestory, the fighting in the annexed region of Artsakh has once again bought devastation. The grandchildren of the 1915 genocide perpetrators are continuing the cleansing campaign against the grandchildren of genocide survivors. We want peace. Our ancestors built churches like Gandsazar Monastery (1216AD). We thank those who stand in solidarity, such as Sir Elton John and French President Emmanuel Macron.

Personally I think this cake was more for my husband than for my son 😅.. I can confirm that I have a house full of action figure, comic book loving individuals. I honestly don't even remember who this guy is, as I said, it was my husbands choice. The cake itself is in the shape of a T, the first letter of my son's name. It sits upright on the board, with internal engineering supporting the weight and overhang. The front is a close up menacing about of said action guy, with black and white stripes airbrushed on the top and sides. Comic book dude himself is fully hand modelled and posed in a true action pose. He was coloured up to look vintage and well "actioned" (is that even a correct use of the word?). Anyway, you get the idea. Someone enlighten me as to who he is again? comics

Gosh I had so much fun with this one!! This was my youngest child's birthday cake, with the party being held at an amusement Arcade! EVERYONE knows Pacman, so I stood him up, gave him arms and legs, and had his mouth wide open. Just in front of him, is a red ghost hovering above the board (yes, above the board), looking back and trying to escape. Fully edible, and did I mention that Pacman himself glows in the dark?! Yep.. we turned out the lights, got the black light on, and watched him glow. In case you hadn't worked it out yet, I like to play with special effects in my cakes 😅

One of my all time favourites.. this was for my son’s 6th birthday, with the party held at a slot car raceway. I wanted that vintage garage/petrol pump vibe, so incorporated the winged logo into the theme. This square was unique, as it was freestanding in one point, the whole weight going through a corner no more than 2 or 3 cm wide. The logo itself was in a relief form(3D layered) and backlit with led lights. Yep, I’m crazy like that. The starburst was strategically airbrushed in a splatter pattern to resemble the vintage era. I love having free range to do something different!

5th birthday for my eldest was ALL about AFL. In the tradition of doing something different, I chose to replicate the Premiership Cup award in cake form. To get the silver finish, it was gilded in edible silver leaf, over an embossed custom message. The base is a hand painted wooden finish, with ultra high shine. Naturally, we themed it to the team he barracks for, with the brown and gold ribbons.. little did we know that this acted as a prediction, as the team won the premiership that year! In fact they went on to win a 3 peat victory!! Flavour reflected the theme again, with a caramel and dark choc mud cake.

So.... Perhaps the cake I love THE most... my Bobble head T-Rex for my dino crazy 2 year old. By far the most fundamental to make. I loved his oversized head, his little short stumpy arms, his stance on his toes and the texturing of his reptilian skin. With a free-standing design, there is always the risk of things going wrong, and they did, but I pushed through. Once he was fully airbrushed (including his backside), he really came to life. I doubt I will ever be able to do him the same again, there was at least 15 hours worth of work in making him, but that's why my kids get all the experimental cakes! Oh, and of course, we set the whole scene with some steamy dry ice action come candle time
