Here are some tips to ensure your cutlets are just right:
1. Touch Test: Lightly press the center of the cutlet with your finger. If it feels soft and bouncy, it's rare. If it's firmer but still has some give, it's medium. If it's firm, it's well done.
2. Thermometre: For precision, use a meat thermometer. Insert it into the thickest part of the cutlet:
- Rare: 49-52°C
- Medium Rare: 54-57°C
- Medium: 60-63°C
- Well Done: 71°C+
3. Cut and Peek: Cut into the cutlet at the thickest part and check the color. Rare will be red, medium rare will be pink, medium will be light pink, and well done will be brown.
4. Rest Time: Let your cutlets rest for a few minutes after cooking. This helps the juices redistribute, making them more tender and flavorful.

Maranoa Beef and Maranoa Lamb products are created using our unique, closed loop, artisan system. In fact, very few people will have come into contact with your delivery by the time it reaches your door! That is very rare and extremely valuable. Here’s how we do it...
From our Farm direct to the Processor on our own truck with our own driver. This ensures the highest animal welfare standards during transport.
We contract a medium size abattoir to process the live animal using only best practice industry standards, systems and specifications. The Beef and Lamb bodies are then moved into sealed, cold room storage.
A specialised carcass delivery professional delivers the bodies to our Butcher Shops and straight into our coldrooms using fully Food Safe accredited systems.
Our highly skilled artisan butchers break down the bodies and process to specification for our front shops, hampers and wholesale customers.
If you're a Hamper Customer, the meat is packed, vacuum sealed, labelled and placed into a box. The box is sealed, labelled with the delivery details and placed into cold storage.
Delivered to your door – Our Food Safe Accredited cold room delivery truck is loaded on a Wednesday each week and goes from Warwick to Brisbane to deliver your hampers to the depot. To ensure the quickest, most efficient to-your-door-service we contract the courier to deliver to multiple locations in Southern Qld ensuring maximum freshness and quality of your product.
