GF Lemon & Ricotta French Toast Stack 🍋🥞
serves: mixture enough for entire loaf of gluten freedom - 4 full stack servings
time: 15 mins prep & cook time

Ingredients:
• Gluten Freedom Sweet Potato Sourdough glutenfreedom__
• 3 Eggs
• 1 Lemon
• 3 Tablespoons Mungalli Organic Ricotta
• 1 Tablespoon Bu Deli Butter
• Spiral Organic Maple Syrup, as much as your heart desires
• 1/2 Cup Fresh Strawberries, sliced
• 1 Teaspoon Ceres Organics Organic Icing Sugar
Method:
1. Whisk together eggs, ricotta & zest and the juice of lemon in a bowl
2. Heat butter in a large pan on medium to high
3. Soak Gluten Freedom Sweet Potato Sourdough slices in egg mixture & place in pan
4. Cook until golden brown on each side
5. Layer cooked slices on plate with ricotta between each slice
6. Top with sliced strawberries, panfried lemon, maple syrup & icing sugar

Meet the Local Farmers: Kalfresh Organics
Kalfresh Organics is based in Kalbar, nestled in the beautiful Scenic Rim region near Brisbane. Kalfresh Organics cultivates a variety of crops across four key regions: the Scenic Rim, Lockyer Valley, Southern Downs & Bowen in North Queensland.
To ensure a reliable year-round supply, Kalfresh collaborates with several family-run farms. In the Scenic Rim, they work alongside organic farmer & agronomist Ed Windley, whose family has been farming since the 1940s. Meanwhile, in Bowen, they have formed a joint venture with the Jurgens family, led by Jamie & Melita Jurgens, who bring a proud heritage of five generations of farming dating back to 1915.

Porridge with Maple-Roasted Pears & Hazelnuts
Vegan | Dairy Free | Cook time: 40 mins | Serves: 2
Ingredients
2 cups of Organic Oats
2 ½ cups Nutty Bruce Almond & Coconut Milk, plus more for serving
1 tbsp Absolute Organic Maple Syrup
1 tsp OWN coconut sugar
1-2 organic pears
¼ cup OWN Hazelnuts (optional)
¼ cup OWN Coconut Chips (optional)
1-2 tsp vanilla extract
Small handful of OWN Organic Bulk Dried Mulberries (optional)
Method
1. Preheat the oven to 180 degrees Celsius.
2. Line a baking tray with paper, and spread the hazelnuts evenly out. Bake for 30 minutes until brown and roasted.
3. Peel the pears, and place in a small oven-safe dish and drizzle with maple syrup and vanilla extract, and then sprinkle with coconut sugar. Put in the oven for 30 mins.
4. Meanwhile, add the oats and milk to a medium sized saucepan. Bring to the boil while stirring, then reduce heat to medium and continue to stir.
5. Cook the oats for around 5-10 mins depending on how thick you like it.
6. Serve the oats into 2 bowls and top with the maple-roasted pears and any remaining juices from the dish, as well as the roasted hazelnuts (shelled), dried mulberries, and coconut chips.
7. Finally, top with some more Nutty Bruce milk and enjoy.
