Testalonga Baby Bandito ‘Chin Up’ Cinsault, 2022.
This red gem joins us all the way from South Africa, and rocks a fab light cherry hue and a wink of floral perfume on the nose. Its lithe and sultry nature, paired with a clean, fresh palate, makes it incredibly charming and accessible. It's great with a really hearty veg, making it a consideration if you are joining us for Vegan Night 🤩 🌱

South coast sand whiting. We’re dishing this up with tart lemon, salty capers & zucchini, for the ideal salty, zesty, bright summer experience. Here, only as long as it’s f**ing good.
Wayne is back! The renowned chef with a history as rich as his flavours returns to The Inn. It was in June 2020 that Wayne initially set the stage for The Inn, creating a dining experience like no other.
Wayne has an extensive two decades worth of experience within the hospitality industry. After completing his apprenticeship, Wayne headed to Sydney to continue his journey at Bathers’ Pavillion in Sydney, where he was fortunate enough to work under Australian culinary veteran and award winning chef, Serge Dansereau. Wayne spent the next ten years working around Australia, including a short stagiaire at hatted restaurant Firedoor, learning to work intuitively with fire and seasonal fresh ingredients. During his stint working around Australia, Wayne embarked on international trips to indulge himself in the culinary heritage of Italy and South East Asia. “It wasn’t just about the food; it was about the culture surrounding food and hospitality. The commitment to quality and bringing people together was inspirational.”
These past two years, Wayne has been involved behind the scenes in well known Canberra venues, Pialligo Estate and XO, gaining exposure to farming and sustainable food production, the importance of seasonality, and how this translates into the guest experience. “We will be leaning into working with passionate producers, utilising produce when it’s in season and at its best. The Inn’s menu will represent what’s available on the day, which not only reduces our footprint, but also leads to an ever changing menu throughout the year.”
Coming full circle, Chef Wayne is bringing his well rounded knowledge, love for fresh produce and immaculate service back to The Inn. You will find him in front of the Asado grill, using wholesome, considered produce to deliver you an every day authentic dining experience.
A few things we are loving at the moment…..
We’ve got an awesome happy hour from 5pm - 6.30pm on the terrace, that’s all about good vibes and great service, perfect for winding down after work. Grab some cheap drinks, shareable snacks, and your best company. Get in early, and you might snag a spot with a killer sunset view of Black Mountain. Cheers to that! 🥂
