What’s that red jelly inside the bon bon?

A pâte de fruit is a type of traditional French confectionery made of fruit paste. 🇫🇷 The flavour of the fruit is concentrated, similar to making a jam, with sugar and pectin. It’s a gorgeous tangy bite of happiness. Have you tried pâte de fruit? ❤️

So what is ganache? Ganache is a luscious combination of cream and chocolate. It can be used as icing/frosting on cakes or to fill bon bons and pralines. Here’s the ratios I use. 🍫 For a thicker ganache to pipe into truffles or bon bons I use 2 parts chocolate to 1 part cream. 🎂 For icing a cake I use equal parts chocolate and cream. Enjoy 🤎 #

Your weekend cocktail is sorted! Thank me later 😜
25g Raspberry Vodka
20g Ruby chocolate
20g raspberry puree
5g lime puree
200g Oat milk or mum’s fave milk

For the decoration: Pop some melted chocolate around the rim of your glass and coat in chocolate powder or fine chocolate pieces. 🍫

For the cocktail: Melt Ruby Chocolate and then add everything to a blender and blend on medium speed for 10-20 seconds. Pour into a cocktail glass and serve immediately. 💖

Happy National Truffle Day! Yes…. It’s a thing we celebrate. I promise I’m not making it up! National Truffle Day on May 2 serves up a deliciously sweet treat and places the chocolate truffle in the spotlight.

N. Petruccelli of Chambery, France is believed to be the inventor of the chocolate truffle in December 1895. Truffles became much more prevalent in 1902 after the Prestat Chocolate Shop opened in London. In fact, Prestat still sells “Napoleon III” truffles made to the original recipe. 🍫 What’s your fave truffle?
