One of the unique products that Luke makes in the farm smokehouse is our loverly beef bacon, made from the brisket of our grass-fed beef cattle. This is a great alternative for those that do not eat pork.

WOW, Christmas is upon us and the grandchildren are jumping out of their socks. The boys are at the Markets with the last of all the Christmas goodies and we are preparing Christmas dinner at home on the farm. We wanted to take a pause amongst all these things to thank you all, our loyal friends, and customers. Good morning and as so many of you have been asking we now have an online shop were you can order all of your delicious bacon flavours and all of our small goods. We ship and pack on a Tuesday so it will arrive at your home on a Wednesday or Thursday. Everything is packed in a chill bag with a reusable gel pack that will hold temperature for 48 hours and is something you can put in your freezer and use over and over again. If you are not going to be home leave an esky out and it will be placed in that for you

One of the questions we get asked a lot is how to insure the most tender mouthful of beef when you are eating your meat goodness. The answer is simple just make sure you cut across the grain of the meat regardless of what cut of beef you have…see attached image.

Here we are in the middle of winter with the solstice having passed and days are starting to get longer again. It has been a very cold winter so far on the farm with no less then 12 heavy frosts starting in early May. Having said that I believe we will see an early spring this year as the Wattle trees already have buds and are showing promise of flowering early August which is something we would not normally see until late August early September.

It has been a little over three weeks since we planted the winter field ... we have had some rain and sunshine…nature has been good to us. The existing pasture is starting to jump and the new seeds have struck and is coming fast. All the signs are very positive so far.
You can see lots of organic matter in the ground.

We have used a different method to direct drilling our paddocks this year as a trial. Instead of the direct drill we have used our cattle to eat down the pasture, then we have cut it real low and put the cattle back in on it for another couple of days to add fertiliser and clear away as much as possible of the stubble. We have then tickled the ground with a set of harrow before using a spreader to broadcast a 16 seed mix including sunflower seeds. We have then run over the ground again with a set of harrows in the opposite direction to get as much soil/seed contact as possible. As you can see from the pictures there is plenty of organic matter in the ground and with the rain, we are having today I fully expect to see a green cover of the existing grass plus the new seed mix in the next 7 to 10 days. We will keep you all posted with this trial with regular updates and pictures.

There are many benefits of standing grass and this year we have not cut any hay. We are looking to carry a full feed load into winter with the cattle leaving plenty behind after they have grazed over the pasture. One of the main benefits is the habitat that the tall grass creates protecting new growth from the harsh sun on those really hot windy days whilst also retaining moisture from the smallest of rains. The standing grass although dry is still rich in nutrients and the cattle love getting into the new growth underneath….giving them the perfect balance of feed. The soil also benefits significantly from the seed bed that is laid down for the following year and the root structure that creates a thriving environment underground whilst increasing water retention. This process also creates a carbon sink which is great for all of our futures.
