It was a pleasure to design and prepare the menu for the Inaugural Perth Hills Persimmon Banquet that was held last Saturday at Canning Orchards in Karragullen.

On Sunday 15th May 2022 the two leaders in Western Australia's biodynamic and sustainable viticulture play host to another very special feast of local cuisine and impeccably-matched fine wine.
Joining us for the afternoon will be Halliday 2020 Australian Winemaker of the Year, Vanya Cullen, and Cullen’s head winemaker Andy Barrett-Leonard.
Swan Valley Wines' Paul Hoffman and Bree Lavell will take us on a journey through their organically-grown wines, made from some of the oldest vines of their kind in Australia.
Highlights from Cullen include an exclusive pre-release of their 2021 Kevin John Chardonnay, tasted side-by-side with the now sold-out 2020 release, and an insight into two of Diana Madeline's greatest Cabernet Sauvignon vintages, ten years apart.
Swan Valley Wines' flagship Chenin blanc will be showcased as well as their perennially sold-out Pét-Nat. The very last few bottles of a rare bush vine Swan District Mataro (Mourvèdre) continues the theme of an extraordinary afternoon of vinous highlights.
Spend a captivating Autumn Sunday afternoon meeting new friends over a long table six-course dégustation of local and seasonal dishes prepared by celebrated Swan Valley chef Vincenzo Velletri of Il Paiolo.

Saturday 3 July 2021 - Sausage Making
Learn how to make traditional Italian sausage with spices used in Vincenzo’s hometown (Fondi, 120km south of Rome). This is a hands-on workshop where everybody will take home a sausage. Bring your own knife, chopping board and a container to take your sausage home.
The workshop will be followed by a shared lunch with polenta served with two different sauces made with Chestnut Brae’s chestnut fed pork.
Sunday 4 July 2021 - Cooking with Chestnuts
Vincenzo will demonstrate how to prepare traditional Italian dishes with chestnuts cooked for you to enjoy at lunchtime.
Both days start at Chestnut Brae farm at 11.00am until 3.00pm and include a tour of the chestnut farm, processing units and farm shop.
$65 One day session for Slow Food members, $75 for non-members
$120 Two day sessions for Slow Food members, $130 for non-members
Slow Food Members will have to enter their membership number at checkout.
