What a week we've had... From cakes, pastries and breads to a day of seafood!

We are lucky to be working closely with some amazing suppliers as well as industry professionals that we can invite into the kitchen who can instill a depth of knowledge and passion that is second to none.

We had Chef Judy in on Wednesday morning providing a class on all things OYSTERS!

This time of year, when they are at their most pristine, most plump and tasty what a great time to shuck, eat and and create recipes that do them proud.

For all the purists out there our favorite were the freshly shucked with just a splash of lemon.

In an industry where a substantial amount of produce comes into many kitchens already cleaned, peeled, sliced or diced it was refreshing to be able to teach our apprentice chefs how to clean, shuck and present an oyster - all of whom had never done this. some had never even tried an oyster!

By the end of the session all had eaten oysters in all different ways, shucked a few and had a new appreciation for this amazing crustacean!

This knowledge and inspiration trickles back to their workplaces to hopefully inspire a new generation of food lovers that want only to use the best local produce in the best possible ways.

This is coming with me to work tomorrow for a taste test... im making banh mi for all the office staff.

What a great morning we had to get to speak to from who produce the & .

This 100% completely sustainable brand do a full nose to tail process with their kangaroo and supply restaurants, supermarkets with their kangaroo meat and an assortment of leather goods including an amazing Butches apron I think ill need to buy very soon!

also spoke about all the kangaroo cuts that they have available and spoke about thew best cooking methods per cut.

We then got to try some gorgeous Kangaroo Pie that was flavoured with native Australian herbs & berries and some flavorsome tenderloin simply pan-fried and seasoned which we ate straight off the pan!

If you have not had kangaroo in a while the Paroo kangaroo is AMAZING! It should be on every menu in Adelaide. Chefs – get on board!

We were lucky to have join our cookery students on a MUSHROOM session to talk all things mushrooms!

We got a lesson on wild mushrooms as well as watch him cook a gorgeous farrow risotto with mushrooms, blue cheese and truffle oil. YUM!

The students loved all the info on all the wild mushrooms available in Australia- as well as the one we must avoid!

The risotto was delicious!

What to do with an endless supply of lemons? Well, you make: lemon cake, lemon and coconut slice, loads of lemon curd and lemonade (which is already all gone!)

So happy to have had Chris Williams from to present to our cookery students doing their meat block. A specialty meat being produced right here in South Australia!

We got to hear all about the up and coming alpaca meat industry and taste:

Alpaca carpaccio, cooked fillet and a range of cured products from the range.

The nutritional comparisons with our traditional meats was mind blowing! Such a good product nutritionally.

PLUS....These animals do very little damage to their environment being soft footed animals, so compared to cattle and sheep they are well superior!

we got the great pleasure to have Shanti from join us to speak about her niche cake business that creates her whole range towards gluten, dairy and refined sugar free, vegan friendly products.

She supplies to over 40 establishments across Adelaide plus private events.

Students were really engaged and asked so many questions. Got them thinking!

This is our dinner tonight... on a 40c day all i want is some beautiful salads and some grilled meats. There's chicken on the bbq as i write this.

It's not particularly Insta worthy or glamerous cooking which seems to be the norm in foodie posts but i want REAL.

We eat simply.

That way its not stressful and everyone can help out. Minimal ingredients IN SEASON eaten without much messing around.

Crispy cucumber with just a sprinkling of pink salt, fat ripe tomatoes with our summer green herbs and a gorgeous organic olive oil and a big bowl of steamed greens with a seeded mustard dressing.
