Anyway, I had someone tell me recently that they actually like their custard tart pastry a little soggy.
I’m not even going to dive into that one… but if you're with me and prefer a crisp base, my recipe includes a handy tip to prevent that dreaded soggy bottom.

The warm weather is not far away, and in this age of trying to reduce refined sugar, I thought I would share with you how I make gluten free, dairy free, refined sugar free, vegan and guilt free choc coated banana 'ice creams'.
1. Peel and cut ripe bananas in half and stick them with a paddle pop stick (I cut them in half so they aren't too long). Freeze on grease-proof paper.
2. Meanwhile make this healthy version of ice-magic!
3. Melt 1 cup coconut oil in the microwave or in a small saucepan.
4. Wait about 10 minutes for it to cool, then add:
🍌 1/2 cup cocoa powder (or carob powder)
🍌 6 tbsp liquid sweetener of your choice, I use maple syrup but be warned, honey doesn't disperse well in this mixture.
🍌 2 tsp pure vanilla extract and a pinch of salt
Stir until there are no lumps and it's nice and smooth.
This recipe makes quite a lot but you need the volume if you want to dip stuff into it.
Once your bananas are frozen, dip them into the chocolate mixture, and if you are feeling crazy, sprinkle with some nuts. Then store your banana pops in a baking paper lined sealed container in the freezer.
The left over chocolate mixture can be stored in a jar on the shelf or in the fridge, but either way, it will solidify unless it's the middle of summer. To remelt it, just zap in the microwave for about 10 seconds or if you are an anti micro-waver, place the sealed jar into a saucepan filled with water to about 1/4 of the way up then gently simmer until it is melted.

💡Baking Tip | Never trust the temperature dial on your oven!
One of the biggest problems that can have an affect on your baking is temperature.
It doesn't matter how much you pay for an oven...they are rarely accurate.
So, to make sure it's at the right temperature every time, invest in an oven thermometer.
If your oven runs hot or cool it can result in dud cakes, pastries and cookies.
For under $10 it's so worth it.
