Take some long, thin Kipfler potatoes and cut them into 2-3cm rounds. Leave the skin on. Bowl them until soft, place in cold water to cool, then peel away the skin.

Scoop a little cavity out in the middle with a spoon.

Place a t-spoon of crรจme fraรฎche into the cavity and top with caviar. Add a couple of sprigs of fresh chives to decorate and serve on basil leaves. Et voila! Delicious! ๐

โก๏ธ Repost: Half of a really good chicken. A free range one from Mt Cotton, 30 minutes from here. The breasts are dry aged for a week on the crown to tighten the skin. The legs are prepared like a sausage with fennel and black pepper and stuffed into the wing. Then the wing and the crowns are finished over the fire so theyโre slightly smoky and crispy. Pickled mushrooms and buckwheat finish the sauce.

We had the pleasure of hosting several of QLD's best chefs at ICE - The Institute of Culinary Excellence - RTO 40748 last night for the launch of the Australian Truffle Season. ๐
We were proud to be showcasing the superb Truffle Hill truffles from Manjimup.
Not only did this give the chefs a chance to get up close and personal with the truffles, it also gave the apprentice chefs a wonderful opportunity to work with high end produce.๐ฅ Several of the chefs who were there last night wished they had had opportunities like that when they were learning the trade.

Are they ripe yet?
Weโre on the cusp of truffle season here in Manjimup.โฃ The Truffle Hill team have been out today and our fantastic doggos are finding lots of Australian Black Truffle (tuber melonsporum), otherwise known as the Chefโs Diamonds. But at this stage, theyโre not ripe and we are having to carefully re-cover over with the rich, fertile Manjimup soil nearly 95% what the dogs are finding.โฃ

Dogs have over 300 million olfactory receptors in their noses, compared to about six million in us humans. Incredibly, the part of a dog's brain that is devoted to analysing smells is about 40-times greater than ours. To give you an indication of how evolved their sense of smell is dogs can detect volatile organic compounds is one part per trillion.โฃ
โฃ
For the past few days, our clever pooches have been snuffling and hunting through the orchard and earning lots of treats thanks to their ability to smell and locate truffles. โฃ
โฃ
For now though, when we carry out an investigatory small nick of the gleba (or flesh of the truffle), itโs not yet at the rich black with white veins stage weโre all familiar with, but is grey/off-white instead. Sometimes after washing the dirt off there can be a reddish hue to the peridium or skin of the truffle as well, all indicators itโs not quite time to dig up this natural underground treasure.โฃ
โฃ
Truffles donโt behave like apricots or bananas โ they donโt continue to ripen once picked. When a truffle is disturbed from the soil and removed from its attachment to fine tree roots and itโs grey, it will remain grey. Try finely shaving or micro planing this pale imitation or a ripe truffle and itโs the taste equivalent of blah. That trademark truffle aroma, while detectable by our canine friends, is a mere shadow of the rich full potent pungency that envelops you when these beauties are fully ripe.โฃ

So as much as we want to dig up these amazing gastronomic delights and get them to you right now we hope you understand that we can not โ and in fact we will not - because they are not ready.โฃ
