Cheesy Cauliflower Pizza Base

Hello everyone, I have been playing in the kitchen. This base is a winner.
Enjoy 😃

Ingredients:
Base
500 g cauliflower, approx half of one large cauli
(steam or boil the cauliflower )
2 eggs
75 g mozzarella cheese
75 g tasty cheese
1 tbsp dried mixed herbs
salt & pepper to taste
Directions:
**Pre heat oven to approximately 180 Degrees Celsius- it could be a little bit more in your own personal oven

1. Roughly chop cauliflower into pieces and steam till softened
2. Allow cauliflower to cool down
3. Place cauliflower into a nutbag, muslin or sieve and squeeze as much water out as possible so it’s not soggy
4. Mix all ingredients together
5. Remove mixture from bowl and place onto a baking tray lined with baking paper. Using a spatula, gently make a flat pizza shape and bake for 25-30 min, or until golden brown
7. Remove from oven and top with favourite ingredients, and bake until cooked. Or just eat it as is.

EXPERIMENTING making gluten-free, grain free breads.
Today I wanted to see how different egg replacers worked with almond meal.
The flax seed meal was good, it does have a distinct flaxseed taste.
Chia seeds were a good replacement, with a more neutral taste.
The chickpea liquid was good, sweeter in taste to the flax and chia, however crumbled more than the flax and chia.
Still playing around with them, so no recipe to share as yet. 🧡

'Gluten Free - Grain Free'
Diets don’t work. They keep us hungry, frustrated, often low in energy and miserable. We often become mal-nourished when going on a gluten-free diet because we tend to gravitate to the myriad of ‘processed and packaged’ so-called gluten-free alternatives. These food items have very little nourishment, and often do not taste good at all.
I created my recipes out of sheer desperation... I needed food that my body could digest, process and utilise. I craved for vitamins, minerals and nutrients that my body could recognise and absorb.
I was starving and had dozens of symptoms, illnesses and disorders. When my Doctor told me I had to go gluten-free, he gave me the list of foods I could no longer eat. I was devastated. It was EVERYTHING I was already eating. I had so many allergies and food sensitivities at the time, the only things left for me to eat were lettuce and radishes. I went crazy!
