Light up your taste buds with our pulled beef nachos!
We've whipped up an extra special off-road cooking recipe to celebrate our recent launch of NACHO driving lights.
𝗪𝗮𝗿𝗻𝗶𝗻𝗴: may cause cravings even in daylight hours.
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀
2kg trimmed and cubed brisket, chuck or beef rib
800g tin of crushed tomato
1 onion
3 cloves of garlic, chopped
1 small jar chipotle chilli in adobo sauce
1 can red kidney beans
3 Tbs tomato paste
Oil
Salt and Pepper
500ml beef stock
Grated cheese
Corn chips
Optional: jalapeños
𝗠𝗲𝘁𝗵𝗼𝗱
Trim and cut your beef into large chunks
Cover in oil and salt and pepper
Sear the beef over the open fire to get that campfire char on the meat. Set the meat aside.
Dice your onion and cook in a large pan until soft.
Add garlic, crushed tomato, chipotles, tomato paste and beef stock.
Bring to a simmer and then add your beef.
Cover with a lid and simmer for 3 hours.
Add your beans and then simmer for another hour or until the beef is pull-apart tender.
Shred your beef.
Assemble your nachos in layers (chips - meat - cheese). Top with jalapeños (optional).
Cook with medium heat until cheese is melted and chips are extra toasty.
Serve with sour cream, avocado and coriander.
TIP: The pulled beef could be prepared at home to save time in the bush but you will miss out on that campfire flavor.
