BEETROOT HUMMUS
This Fresh Beetroot Hummus recipe is very simple. Similarly to any hummus recipes, there are some staple ingredients that you always have to use to make hummus.
Ingredients:
- 300g chickpeas (cooked)
- 2 medium beetroots (boiled)
- 2 garlic cloves
- 1 tablespoon tahini
- 2 tablespoons olive oil
- juice of 1/2 lemon
- 1/2 teaspoon salt
Using a food processor, process all ingredients until creamy. Garnish it with roasted beetroots, parsley and nutritional yeast (a bit of balsamic reduction would be a nice addition to it as well!).
Refrigerate or use immediately. Beetroot hummus will keep in the fridge for 4-5 days.

PLANT-BASED BREAKFAST
This Leek and Spinach Quiche is a great option of savoury breakfast. It's pretty simple to make and can be prepared in advance (precook and keep it in the fridge for a few days or freeze).
Ingredients (12 quiches):
- 3 vegan puff pastry sheets
- 2 leeks (sliced)
- 100g spinach
- 300g chickpea flour
- water
- olive oil
- salt, white pepper, onion powder, garlic powder
Method:
- Preheat your oven to 200Β°C. Using a pie moulder, cut 12 pieces of puff pastry and fit it into a muffin tray drizzled with oil.
- Mix the chickpea flour and seasonings in a bowl and add enough water to form a thick paste. Let it rest for 10 minutes.
- Heat a pan, add a table spoon of olive oil, sauteΓ© the sliced leek. After cooked, add the spinach to the pan just for a minute.
- Add the leek/spinach to the chickpea paste and mix well. Add the mixture to the muffin tray, fitting it inside the puff pastry.
- Bake it for about 20 to 30 minutes, or until golden brown.
