CRUNCHY ZUCCHINI FRIES
CRUNCHY ZUCCHINI FRIES are the perfect way to get the kids excited about eating their greens, plus it’s a great family lockdown activity 🙌 Be sure to save this post for when hunger strikes! 👩‍🍳 INGREDIENTS 4x Zucchini’s Oil /cooking fat [of your choice] 1/2 cup tapioca/arrowroot flour 1 cup almond meal 1 tsp paprika 1 tsp garlic powder 1 tsp oregano 1/2 tsp salt 1/4 tsp chili powder [optional] 3 eggs 🍟 METHOD 1️⃣ Slice zucchini length ways into chip 2️⃣ Place tapioca into a bowl 3️⃣ Crack and lightly whisk eggs 4️⃣ Combine remaining dry ingredients into separate bowl + mix well 5️⃣ Coat zucchini in tapioca flour, then egg mix, then coat in almond crumb mixture 6️⃣ Shallow fry in medium heat for approx. 3-5 mins or until golden 7️⃣ Drain on paper towel and allow to cool slightly Serve + enjoy with favourite sauce... 🤤 Who’s excited to give these a try this weekend?
