Cider fermenting ๐๐บ๐พ
Last year's harvest of ~250kg Starking and Golden delicious yielded ~180L of juice.
We experimented a lot with it, fermenting with different types of yeasts, fermenting it spontaneously, dry hopping and barrel aging some of it.
The results were interesting but unsatisfactory.
We felt that it came out too sour and flat.
Today, we have decided to give our cider endeavor a second chance and picked up (or collected from the ground, more precisely) ~400kg of super-ripe and super-delicious Pink Lady apples.
They will soon be machined and fermented. Keep following ๐

Quite pleasant but needs a bit more time.
Nose shows a nice bouquet of maltiness, hoppiness and esters. Tastes citrusy, light but flavorful with a pronounced bitterness which is not over the top imo.
A nice world cup beer overall, intentionally.

Really happy with the results.
The beer is haxy and creamy with a sweet cereally backbone. Zero bitterness, estery aromas and pleasant hoppy notes of clรฉmentine and tropical fruits.
