שבת הבאה, כמו בכל שנה, נגיש בירה מהחבית ביריד האביב של מעלה גמלא.
ניתן יהיה גם לרכוש שישיות לקחת הביתה.
לכבוד היריד והאביב הכנו עבורכם שלוש סוגי בירות מהעולם:
🍺אי.פי.איי IPA אמריקאית 5.4% - בהירה, מרירה והדרית. מעוננת ומלאה בכשות טרי, כולל שתי תוספות דרייהופ להגברת הארומות הנפלאות של הפרחים המופלאים האלה.
🍺 סזון בלגי 7.7% - סגנון כפרי מהמחוז הינו בדר' בלגיה. בהירה עם שלושה סוגי דגנים - שעורה, חיטה ושיבולת שועל. בושלה עם כשות גלקסי האהוב עלינו מאוד. בירה חזקה אבל יבשה ומאוזנת. מרווה מאוד ויורדת בגרון בקלות מסוכנת.
🍺 ווייסביר 5.0% - בירת חיטה גרמנית קלאסית. מרקם קטיפתי, מתיקות של חלה טרייה ואסטרים המאפיינים את סוג השמרים הבווארים. קלילה אבל מלאת טעמים וריחות.

When done right, there's nothing like this Belgian farmhouse ale.
Regardless of its name (Saison in French means season) - it's an all-weather beer 🍻
Keg only this time, sorry falks.

כשעושים אותה כמו שצריך, אין כמו הבירת חווה הבלגית הזאת.
למרות השם (סזון בצרפתית זה עונה), זאת בירה שאפשר להנות ממנה בכל מזג האוויר וכל השנה 🍻
הפעם מחבית בלבד, אתכם הסליחה.

Cider fermenting 🍎🏺🍾

Last year's harvest of ~250kg Starking and Golden delicious yielded ~180L of juice.
We experimented a lot with it, fermenting with different types of yeasts, fermenting it spontaneously, dry hopping and barrel aging some of it.
The results were interesting but unsatisfactory.
We felt that it came out too sour and flat.
Today, we have decided to give our cider endeavor a second chance and picked up (or collected from the ground, more precisely) ~400kg of super-ripe and super-delicious Pink Lady apples.
They will soon be machined and fermented. Keep following 🍎

האסיף בשנה שעברה של 250~ ק"ג סטארקינג וגולדן דלישס הניב 180~ ליטר של מיץ.
התנסנו הרבה בלהתסיס עם סוגי שמרים שונים, באופן ספונטני, תוספת כשות ויישון חלק ממנו בחבית.
התוצאות היו מעניינות אך לא מספקות.
הרגשנו שזה יצא חמוץ ושטוח מדי. היום, החלטנו לתת למאמץ הסיידר שלנו הזדמנות שנייה וקטפנו (או אספנו מהאדמה, ליתר דיוק) 400~ ק"ג של תפוחי פינק ליידי סופר-בשלים וסופר-טעימים.
בקרוב הם יעברו סחיטה ותסיסה. המשיכו לעקוב 🍎

On the 👈 - German Pilsner
On the 👉 - Belgian Saison

QA.
No filters.
Quite pleasant but needs a bit more time.
Nose shows a nice bouquet of maltiness, hoppiness and esters. Tastes citrusy, light but flavorful with a pronounced bitterness which is not over the top imo.
A nice world cup beer overall, intentionally.

Grainbill: Pilsner, pale, Oats, wheat
Hops: Amarillo, Simcoe, Mosaic, Citra (whirlpool + DDH)
Yeast: Verdant IPA
Mash 60min@67°c
Boil 60min no hops
Whirlpool 30min@75°c 5g/l
Volume into fermenter 47L@OG 1.054
Fermented 14d@20°c
FG 1.012 hence abv ~5.5%
Filled 2 kegs and 14 bottles
Force carbonation 2d@35psi
Really happy with the results.
The beer is haxy and creamy with a sweet cereally backbone. Zero bitterness, estery aromas and pleasant hoppy notes of clémentine and tropical fruits.
