Sometimes, my quest 🔎 to save the ingredients that have spent an eternity in my pantry gives birth to the most wonderful creations 🪄. This Carrot Cake 🥕 is the easiest and absolute most delicious you will ever try 🤤. It is adapted as a traybake, but can be made into a layered cake 🎂 (by doubling the quantities for the cake batter) and making a whole lot more frosting (my guess is 3 times more). There was a sad block of tofu in my fridge 🧀, so I decided to try my luck at making Vegan Spring Rolls 🥬, especially because I love ordering them from Asian restaurants. These are quite quick to make, once you get over the painstaking process of cutting everything thinly 🔪, which I have zero patience to do. Use a mandolin slicer if you are any bit like myself and want to make your life easy. The dipping sauce 🥜 is as easy as mixing all of the ingredients in a bowl 🍜 (which is why no explicit recipe is provided). Today’s recipe is dedicated to my beautiful .m.surdu and her love for Masala Chai 🍵. Each time I make this, I feel the hug 🤗 of every single God of Ayurveda. I am instantly transported to a space of cosiness 🛋️ and comfort, where my spirit is replenished 🔋 with the flavour of all the spices that make this tea an absolute delight 🤤. I have had this recipe pending since back when pumpkin 🎃 was still a thing (a month ago, during Thanksgiving season), but I was persistently unhappy with image processing and framing and I kept finding flaws in my work 👎🏻. And then I remembered that, when I taste-tested these Pumpkin Pie Overnight Oats, I enjoyed them so much that I emptied the whole thing 🥄, completely forgetting that I needed to snap some photos of the final product 📷. So really, looks are of little importance and it’s what’s inside that counts ❣️. Which is why I leave you with this recipe 📝 as we wrap the year, and look forward to bringing you more yumminess in 2022 🥙. Taste life to the fullest, darlings! 🍎

A few weeks ago,
discovered Raspberry Raffaello .deutschland. She loves raspberries and coconut 🥥, so those two flavours together meant instant love 😍. Which is what inspired her birthday cake 🎂. Drawing from the mastery of and her many fabulous mousse cake recipes 📝, I played with my food and freestyled as I went.
Lessons learned: 1. Almond Sponge Cake is delicious and as fluffy as a cloud ☁️, but deflates dramatically after cooling down. If you want to play safe, bake your cake in a 24 cm spring form pan (use half a measure more of the quantities) and set it into a 22 cm pan when assembling the cake 🍰. You can toss in a handful of almond flakes for some extra body (that’s what I would do next time).
2. While puffed rice white chocolate 🍫 may be delicious, making a chocolate mousse alternative turns into a mushy mess (don’t try it at home! 🙅🏻). Use candied almonds for your crunch factor instead.

Yesterday evening, told me that the Pumpkin Pie Bars 🎃 I whipped up for the KEYS workshop were the first to go and everybody loved them (Yay! 👏🏻). That is good enough a reason to share this lovely, wintery 🧣, comfort-filled recipe. As listed below, the recipe makes for a pumpkin pie 🥧, which I adapted in order to get the individual serving format, by using double the amount of crust to 1 ½ amount of filling. I have had a recipe for "Pecan Atole" saved in my phone notes for more than a year 📅, but had not tried it. Sunday afternoon and the bunch of walnuts 🥜 laying around the pantry served as the perfect excuse to start playing with my food 🎨. While doing my bit of background research, I realised that "atole" is a Mexican corn-based warm beverage 🌽, therefore, in the absence of corn this drink would be something else. But the English language seems to fall short on words 📚 describing hot, thick, decadent, porridge-like drinks. Which is why I settled for the generic "milkshake"🥛 to describe one of the most satisfying flavour experiences. Truth be told, this would probably be just as yummy served cold 🧊, but warming it up brings it to a whole new level. And since winter is coming ❄️, I invite you to swipe for the recipe 👉🏻 and enjoy.
