Here's a delicious and healthy recipe for a fruit and nut granola that you can enjoy as a breakfast or snack 😊
Ingredients:
2 cups rolled oats
1 cup mixed nuts (such as almonds, walnuts, and pecans), chopped
1/2 cup dried fruit (such as raisins, cranberries, or chopped apricots)
2 tbsp honey
1 tbsp olive oil
1 tsp vanilla extract
1/4 tsp salt
Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the oats, nuts, dried fruit, honey, olive oil, vanilla extract, and salt. Mix well.
Spread the granola mixture evenly on a baking sheet lined with parchment paper.
Bake in the preheated oven for 15-20 minutes, or until golden brown, stirring occasionally.
Remove from the oven and let cool completely.
Once it's cool, granola can be stored in an airtight container for up to 2 weeks.
Enjoy your granola with yogurt, milk or on its own as a snack !

Almond farming is a long-term commitment. Orchards generally produce for 25 years, yielding their first crop three years after planting.
Grown in California’s ideal Mediterranean climate, the annual almond lifecycle has many stages and an abundance of natural beauty.
The US almond life cycle is as follows:
November through January: The almond trees go through a period of dormancy, losing their leaves and entering a dormant stage during California's cool and wet winters. The orchard soils store up rainwater for the upcoming growing season, and the trees store nutrients and energy for next year's crop.
Toward the end of dormancy, buds begin swelling on each tree's branches in preparation for bloom.
Between mid-February and mid-March, almond tree buds burst into white and light-pink blooms. During this time, beekeepers bring hives into the orchards to help pollinate the crop.
As the trees blossom, honey bees forage for pollen and nectar, bringing it back to their hives as their first natural food source of the year.
From March to June, almond kernels mature and grow to full size, with the shell hardening around it, both protected by a fuzzy outer hull.
In July, almond hulls split open, exposing the almond shell and allowing it and the kernel inside to dry.
Shortly before harvest, the hulls turn a straw-yellow color and open completely.
From August through October, mechanical tree "shakers" harvest the crop by vigorously shaking it to the ground. The almonds then dry naturally in the warm California sun for 7-10 days before being swept into rows by a “sweeper” machine.
After that, a harvester or “pickup” machine drives over the rows, vacuuming the nuts up into a cart that brings them to the edge of the orchard for transport to the next stop on their journey.

How to make a perfect pistachio frangipane ?
Ingredients for 6 people:
2 puff pastry disks of 22 cm diameter
Some strawberries for decoration
For the pistachio orange blossom almond cream:
60 g of almond powder
60 g of soft butter
60 g of granulated sugar
1 egg
10 g of pistachio paste
2 g of orange blossom
For the crunchy pistachio tuile:
3 sheets of phyllo dough of 20 cm diameter
30 g of chopped pistachios
30 g of caramelized pistachios
30 g of bright green pistachios
30 g of honey
30 g of butter
To make the pistachio and orange blossom almond cream:
Using a spatula, mix together the soft butter and sugar until homogeneous. Then add the almond powder, egg, and pistachio paste and continue to mix until smooth and creamy.
To make the base of the tart:
Using a brush, moisten the edges of one pastry dough disk, then using a pastry bag, fill it with the almond cream mixture. Cover with the second pastry dough disk and seal the edges using your fingers. Refrigerate for 3 hours, then bake for 45 minutes at 160°C.
To make the crispy pistachio tuile:
Melt the butter and honey in a saucepan. When the mixture reaches 50°C, use a brush to coat the first sheet of phyllo dough, then cover it with a second sheet and repeat until the third sheet. Bake in the oven at 170°C for 8-10 minutes.
When the phyllo dough is cool, place it in a 20 cm circle. Add the chopped pistachios, whole pistachios, and caramelized pistachios, and pour over the remaining honey and butter mixture. Bake in the oven at 170°C for 8-10 minutes.
To finish the orange blossom pistachio almond tart:
To assemble the baked tart with the pistachio tuile, place a small amount of honey on the baked tart to stick the tuile. Then add some strawberries on the tart.
