Copycat Chicken Lettuce Wraps π
INGREDIENTS:
3 tbsp. hoisin sauce
2 tbsp. low-sodium soy sauce
2 tbsp. rice wine vinegar
1 tbsp. Sriracha (optional)
1 tsp. sesame oil
1 tbsp. extra-virgin olive oil
1 medium onion, diced
2 cloves garlic, minced
1 tbsp. freshly grated ginger
1 lb. ground chicken
1/2 c. canned water chestnuts, drained and sliced
2 green onions, thinly sliced
Kosher salt
Freshly ground black pepper
Large leafy lettuce (leaves separated), for serving
Cooked white rice, for serving (optional)
DIRECTIONS:
1. Make the sauce: In a small bowl, whisk together hoisin sauce, soy sauce, rice wine vinegar, Sriracha, and sesame oil.
2. In a large skillet over medium-high heat, heat olive oil. Add onions and cook until soft, 5 minutes, then stir in garlic and ginger and cook until fragrant, 1 minute more. Add ground chicken and cook until opaque and mostly cooked through, breaking up meat with a wooden spoon.
3. Pour in sauce and cook 1 to 2 minutes more, until sauce reduces slightly and chicken is cooked through completely. Turn off heat and stir in chestnuts and green onions. Season with salt and pepper.
4. Spoon rice, if using, and a large scoop (about 1/4 cup) of chicken mixture into center of each lettuce leaf. Serve immediately ππ

INGREDIENTS:
1 large sweet potato, peeled and cut into 1/2-inch cubes
1 large red onion, diced
3 tbsp. extra-virgin olive oil, divided
Kosher salt
Freshly ground black pepper
1 lb. boneless, skinless chicken breasts
1/2 tsp. garlic powder
1/2 tsp. ground ginger
1 small clove garlic, minced
2 tbsp. creamy peanut butter
1/4 c. Juice of 1 lime
1 tbsp. low-sodium soy sauce
1 tbsp. honey
1 tbsp. toasted sesame oil
4 c. cooked brown rice
1 avocado, thinly sliced
2 c. baby spinach
1 tbsp. Freshly chopped cilantro, for garnish
1 tsp. Toasted sesame seeds
DIRECTIONS:
Preheat oven to 425Β°. On a large baking sheet, toss sweet potatoes and onion with 1 tablespoon of oil and season with salt and pepper. Bake until tender, 20 to 25 minutes.
Meanwhile, in a large skillet over medium- high heat, heat 1 tablespoon of oil. Season chicken with garlic powder, ginger, salt, and pepper. Cook until golden and no longer pink, 8 minutes per side. Let rest 10 minutes, then slice.
In a small bowl, whisk together garlic, peanut butter, lime juice, soy sauce, and honey. Whisk in sesame oil and remaining 1 tablespoon olive oil until smooth.
Divide rice among four bowls and top each with sweet potato mixture, chicken, avocado, and baby spinach. Sprinkle with cilantro and sesame seeds and drizzle with dressing before serving. π₯°

Yassss, brownies are totally paleo! Here's how to make the ultimate paleo-friendly dessert. π
INGREDIENTS
Cooking spray
3/4 c. unsweetened cocoa powder
1/2 c. almond flour
1 tsp. baking soda
1 tsp. kosher salt
1/2 c. almond butter
1/2 c. coconut sugar
1/3 c. honey
1/4 c. extra-virgin olive oil
2 large eggs
1 tsp. pure vanilla extract
Sea salt, for sprinkling
DIRECTIONS:
Preheat oven to 350Β° and line a 8"-x-8" baking pan with parchment paper and grease with cooking spray. In a large bowl, whisk together cocoa powder, almond flour, baking soda, and salt.
In a medium bowl, whisk together almond butter, coconut sugar, honey, oil, eggs, and vanilla until smooth. Add dry ingredients and stir until just combined.
Pour into prepared pan and bake until a toothpick inserted in the middle comes out clean, 22 minutes.
Sprinkle with sea salt then let cool slightly before serving ππ

Christmas pudding might not be the dessert you make every year, but we are here to suggest you start! This one is gluten free which will help give you a break from all of the heavy (but delicious) desserts on the table π
Full of dried fruit and nuts and topped with a brandy sauce what's not to love? Plus, Christmas pudding can be made up to 3 MONTHS in advance! Store, tightly wrapped, in the fridge then bring to room temperature before serving:
INGREDIENTS:
3/4 c. dried cranberries
3/4 c. dried cherries
1/2 c. golden raisins
1/2 c. dried currants
1/4 c. brandy
2 tbsp. orange liquer
Zest and juice of 1 lemon
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1 c. packed brown sugar
1 large apple, grated
1/2 c. chopped almonds
2 large eggs, beaten
3 tbsp. vegetable oil
2 tbsp. molasses
2 c. almond flour
1/4 c. cornstarch
1 tsp. baking powder
1 tsp. kosher salt
FOR BRANDY SAUCE
4 tbsp. butter
2 tbsp. cornstarch
1 1/2 c. milk
1/4 c. granulated sugar
1/4 c. brandy
DIRECTIONS:
1. In a large bowl, combine cranberries, cherries, raisins, currants, brandy, orange liqueur, lemon juice, zest, cinnamon, nutmeg, and cloves. Cover and refrigerate overnight.
2. Grease a pudding basin or medium heat-safe bowl. In another large bowl, combine sugar, apple, and almonds. Add to marinated fruit then stir in eggs, vegetable oil, and molasses. Mix in almond flour, cornstarch, baking powder, and salt.
3. Add mixture to pudding basin and pack in tightly. Cover top with parchment paper then cover with foil. Tie a string or around foil to secure it tightly.
4. In a large pot, place a ramekin thatβs large enough for your pudding basin to sit on. Place basin on top then pour enough boiling water into the pot (but not over the basin) to come halfway up your basin. Cover your pot then simmer over low heat for 6 hours. Check water every so often and add more water if it drops below half.
5. Carefully remove from pot then flip upside down on a cutting board and let cool completely.
6. Meanwhile, make brandy sauce: In a medium saucepan over medium heat, melt butter. Whisk in cornstarch then slowly whisk in milk. Add sugar and cook until sugar dissolves. Lower heat and cook until sauce thickens, stirring occasionally, 10 minutes. Add brandy then remove heat.
7. Pour sauce over pudding to serve π
