Wind down the summer with crisp and tasty Ocean Jewel Breaded Butterfly Shrimp, with a side of fries and onion rings for a delicious appetizer.

For a fresh and flavourful summer dish, try this recipe featuring Ocean Jewel Sole drizzled with a lemon dill sauce and a side of leafy greens and mixed vegetables.

Serves a family of 4

Ingredients:
• 4 Ocean Jewel Sole Fillets
• Lemon Juice
• Sugar, granulated
• Butter, salted
• Dill, dried
• Lemon zest from lemon rind
• Corn starch

Method:

1. Heat water to a simmer in a pot over low-medium heat. Add the sugar and lemon juice, and dissolve the sugar.
2. Add the butter and dried dill - taste and adjust with lemon juice in small amounts (only if needed).
3. Gradually thicken with cornstarch and water slurry.
4. Adjust to desired thickness, then set aside thickened lemon sauce.
5. Pan the sole in parchment-lined 2" hotel pans.
6. Brush olive oil evenly over each sole fillet.
7. Bake in a preheated 375 F (190 C) oven until the fish reaches an internal temperature of 160 F (71 C).
8. Plate baked sole fillet and top with 30 ml (1 tbsp) of lemon dill sauce.

Grilling seafood is easier than you think. Whether it's Salmon, Haddock, Rainbow Trout, or Tuna, you'll be hooked once you get a taste of it!

Here are some helpful tips for grilling seafood:

1. Set clean seasoned grill to medium/high heat.

2. Keep the skin on, which will help keep the flesh together.

3. Pat dry and season with kosher salt to help keep it from sticking.

4. Rub fish with olive oil and your favourite spices.

5. Have a spatula ready. Place the fish flesh side down first, do not touch for at least a few minutes. It should be able to move or flip with ease. Do not touch too early, or you may tear the flesh.

6. Fish cooks usually 7-8 minutes per inch.

7. Near the end, brush with melted butter.

8. Serve with your choice of veg and starch and garnish with a lemon wedge.
