Taco bout TACO TUESDAY šš®
I whipped up this refined bean recipe instead of having your traditional ground meat! If youāre looking for a meatless option, these refined beans do not disappoint!!
Ingredients:
1 can of black beans, rinsed and drained
1/2 cup vegetable broth
1/4 tsp sea salt
1/4 tsp ground cumin
1/2 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tbsp olive oil
Directions:
1) In a medium saucepan over medium heat, warm the vegetable broth, add the drained beans, olive oil and spices, and bring to a boil.
2) Stir and reduce the heat to low for ~10 minutes or until the beans have softened and the liquid has somewhat absorbed.
3) Remove from the saucepan and transfer to a food processor/blender.
4) Blend the beans until you reach your desired consistency.
5) Taste and add some lime juice for extra flavour if preferred.
Next add all of your favourite toppings to the tortilla/taco! I included purple cabbage, lettuce, cheese, tomato, guacamole and greek yogurt (instead of sour cream).
