INTRO TO AYURVEDA
I first started learning and studying Ayurveda about 4-5 years ago and I have just finished my Ayurvedic Health Counselor course. Note that I am by no means an expert in this and when it comes to Ayurveda, you're not ever really done learning. The information is so deep and intricate...it takes a minimum of 6 years to become an Ayurvedic doctor! BUT I have learnt a fair amount along this journey and so I'm trying to share little bits with you!
There are so many different schools of thought when it comes to Ayurveda but I'll try to be as accurate as possible with the information give out to you all!
In Sanskrit, Ayurveda means “The Science of Life.” Ayurvedic knowledge originated in India more than 5,000 years ago and is often called the “Mother of All Healing.”
When comparing Ayurveda with Western medicine, the diagnostic methods used to identify imbalances are so detailed, it can identify a condition or disease sometimes 4 stages before western medicine does. It is said that Ayurveda is a preventative science, whereas western medicine is curative. I genuinely believe combining both is the best solution :)
Ayurveda's definition of health is not just for the physical body; it is the harmony of mind body and soul. Ayurveda teaches us how to tune into our bodies and how to adapt our life in order to create an environment, internal and external that is most supportive in optimizing our own health.
On a gross level when we look around every day, we see that every single body is unique and so it doesn't make much sense to have medicines, treatments, dietary recommendations as a 'one fits all'. Ayurveda sees each individual as an INDIVIDUAL and so the way my body may react to a specific vegetable may be completely different to the way my husband or friend might.
We all have genes, but our genetic make up differs. In the same way, Ayurveda sees the elements as the fundamental building blocks of humans and nature. Our physical bodies are all made up of the 5 elements, but the proportions of each elements in our bodies differ. In Ayurveda this specific elemental combination is referred to as our DOSHA. Dosha means CONSTITUTION.
Oh but wait! It gets a little more detailed! We are born with an ORIGINAL dosha, our optimal elemental balance (prakruti, in Sanskrit). In parallel, we have our current dosha (vikruti, in Sanskrit). Our current dosha refers to the imbalances we are facing caused by whatever we are experiencing through our senses (eg. changes in environment, the climate, the food we eat, the things we listen to, the things we see every day, the scents we smell, etc.)
So once we are aware of both the goal is to adjust our lifestyle, dietary habits in order to balance back to our original..our optimal health state and keep it there!
A misconception I had at the beginning of my studies was that only certain things are considered are 'ayurvedic' like kitchari or specific vegetables. But as I dove deeper, I realized that actually everything is Ayurvedic. It's just about understanding what your body is feeling and then reacting and nourishing it accordingly. Ayurvedic cooking is where the current physical, mental, and psychological state is considered before preparing a meal. Consequently, the food choices, the spices used, and the way it is prepared is unique to the person and their current circumstance.
There are 3 main DOSHAS - | KAPHA - water & earth| PITTA - fire & water | VATA - air & ether|.
I will break down these DOSHAS FOR YOU AS SIMPLY AS I CAN in my future posts! As Einstein once said, "If you cant explain it simply, you don't understand it well enough." SO WISH ME LUCK!!! This is really putting my studying to use!

Plant Based Moon Milk🌙🌸🌙
As an ayurveda enthusiast and as person who's photo is printed next to the word anxiety, yaaay thats me, I came across this yummy drink that I swear on it and it's part of me and oh my god so yummy!
Moon milk might be a great addition to your nightly routine if you tend to have trouble falling asleep. The adaptogens within the milk help your body de-stress and relax, plus the milk itself contains melatonin and tryptophan, two natural substances that help you fall asleep.
🌱 INGREDIENTS:
1 1/2 cup non-dairy milk almond, coconut, oat, or macadamia (we love almond milk and it's something that always exist in our household)
1/8 teaspoon ground ginger (optional)
1/8 teaspoon ground cinnamon
ground nutmeg pinch,
ground cardamom pinch,
1/4 teaspoon ashwaghanda*
2-3 teaspoons dried roses or alternatively rose petals
1/4 teaspoon astralagus (optional)
🌱The Magic!
Boil for 2-3 minutes the milk alone and then add slowly the rest of ingredients. Say a little prayer, poor into your favourite mug and enjoy it warm not boiling hot. You can add a little honey.

These Cacao Bars are a tasty mix of almonds, oats and whole grain cereals.
A great snack and easy to make.
📍Ingredients:
•2 cups oats
•1/2 cup whole grain cereal
•1/4 cup almonds
•2 tbsp coconut butter
•3 tbsp honey
•3 tbsp cocoa
•4 tsp tahini
•A pinch of cinnamon
📍Instructions:
1.Place the oats with the almonds in a pan and bake them in air for 10 minutes at 180°C.
2.In a bowl, mix well all the ingredients together until they are thorougly combined.
3.Pour the mixture into a cooking vessel 20x20cm with parchment paper on and place in the fridge for 2 hours.
4.Cut the bars into small pieces.
Enjoy!

Αυτές οι μπάρες με κακάο, είναι ένα πεντανόστιμο μείγμα απο αμύγδαλα, βρώμη και δημητριακά ολικής αλέσεως. Ένα υπέροχο σνακ που φτιάχνεται γρήγορα.
📍Υλικά:
•2 κούπες βρώμης
•1/2 κούπα δημητριακά ολικής αλέσεως
•1/4 κούπα αμύγδαλα ανάλατα
•2 κσ βούτυρο καρύδας
•3 κσ μέλι
•3 κσ κακάο
•4 κσ ταχίνι
•Μια πρέζα κανέλα
📍Οδηγίες:
1.Τοποθετούμε τη βρώμη με τα αμύγδαλα σε ένα ταψάκι και ψήνουμε στον αέρα για 10 λεπτά στους 180°C.
2.Σε ένα μπολ, ανακατεύουμε καλά μέχρι να ομογενοποιηθούν τα υλικά.
3.Ρίχνουμε το μείγμα σε ένα σκεύος 20x20εκ με αντικολλητικό χαρτί και το βάζουμε στο ψυγείο για 2 ώρες.
4.Κόβουμε τις μπάρες σε κομματάκια.
Καλή σας απόλαυση!

𝚂𝚙𝚒𝚗𝚊𝚌𝚑 𝙼𝚊𝚜𝚑𝚎𝚍 𝙿𝚘𝚝𝚊𝚝𝚘𝚎𝚜 𝚆𝚒𝚝𝚑 𝙱𝚎𝚕𝚞𝚐𝚊 𝙻𝚎𝚗𝚝𝚒𝚕𝚜
Ένα διαφορετικό πιάτο, πλούσιο σε πρωτεΐνη.
▪️Συστατικά:
•4 φλ σπανάκι baby
•900γρ. πατάτες, ξεφλουδισμένες/ψιλοκομμένες
•Τριμμένη παρμεζάνα
•2 κσ βούτυρο, ξεχωριστά
•Λίγο γάλα
•2 φλ μαγειρεμένες μαύρες φακές (beluga)
•Ξινή κρέμα (sour cream)
•Μια πρέζα αλάτι/πιπέρι
•Ελαιόλαδο, όσο χρειάζεται
•Λιναρόσπορος (προαιρετικά)
•Φρέσκια μέντα (προαιρετικά)
▪️Οδηγίες:
1.Βάζουμε τις πατάτες σε μια μεγάλη κατσαρόλα και τις βράζουμε για 20 λεπτά. Τις στραγγίζουμε και τις κάνουμε πουρέ ρίχνοντας το γάλα και 1 κσ βούτυρο.
2.Ενδιάμεσα, σοτάρουμε το σπανάκι με το υπόλοιπο βούτυρο, μέχρι να μαραθεί. Προσθέτουμε αλάτι/πιπέρι. Αφαιρούμε από τη φωτιά και ρίχνουμε μια καλή ποσότητα παρμεζάνας. Κάνουμε πουρέ το σπανάκι και τον αναμειγνύουμε με αυτόν της πατάτας.
3.Σερβίρουμε τον πουρέ σε ένα πιάτο, από επάνω βάζουμε μια κουτάλα μαγειρεμένες μαύρες φακές, ξινόκρεμα και ελαιόλαδο. Καλύπτουμε εάν επιθυμούμε με λιναρόσπορο και φρέσκια μέντα.
An alternative meal, high in protein.
▪️Ingredients:
•4 cups baby spinach
•2 pounds potatoes, peeled/chopped
•Grated parmigiano
•2 tbsp butter, divided
•Splash of milk
•2 cups cooked black lentils
•Sour cream
•A pinch of salt/pepper
•Olive oil, as needed
•A sprinkle of flax seeds (optional)
•Fresh mint (optional)
▪️Instructions:
1.Add the potatoes to a large pot and boil them for 20 minutes. Drain them, then mash with milk and 1 tbsp butter.
2.Meanwhile, sauté spinach with the remaining butter, until it is wilted. Add salt/pepper. Remove from heat and stir in, a good amount of parmigiana. Puree the spinach, then add it into the smashed potatoes.
3.Serve the puree to the bottom of a bowl, then top with a scoop of cooked lentils, sour cream and a drizzle of olive oil. Top with a sprinkle of flax seeds and fresh mint if it’s desired.
