Pasta Club! January is here and weāre thrilled to be working with Chef Kaede Hirooka, co-chef at . Keade has put together TWO amazing dishes:
1. Lobster & Prawn Mafaldine, our feature dish for January using poached lobster and prawn in a kombu dashi bisque, beurre montƩ, and a yuzu gremolata to finish.
2. Applewood smoked aubergine Caponata Tagliatelle as an add-on or substitute. Made with our hand cut tagliatelle, Piave cheese and toasted Pine Nuts.

Pasta Club for November is coming right up! Chef Shamir Bechara is repping for this feature pasta dish. Shamirās incredibly flavour packed take on Spaghetti Puttanesca using his own Gallo Mussel Conserva, San Marzano Pomodoro, olives, capers, and white anchovy.

An update from in Bologna - what happens when you go to the birthplace of Tortellini? You make, eat, and see a lot of tortellini.
Fresh Linguine is going out to all Pasta Club members this month! Pair this pasta up with an optional add-on kit for Duck Cacciatore, made with braised duck legs, Red Miso Bacon from , San Marzano tomatoes, Kalamata olives, garlic, & red wine.
This kit can be added on to your pasta club delivery - orders go out starting next week and continue until October 19th.

We took a trip out to Victoria to visit the infamous Zambriās and Executive Chef Julia McInnisā¦ Julia has spent over a decade at the family-run Zambriās restaurant, her passion for connecting family and friends over food that is rooted in tradition is why we canāt wait to share this feature dish with you!
Zucca and Amaretti is an ingredient combination originating in Northern Italy, dating back as early as the 14th century. Here we are using fresh Tagliatelle, ricotta and mascarpone, herbs, and grana padano. Crushed amaretti give this dish texture and balance!
