Pickled Jalapeño Peppers
Ingredients:
10 jalapeno peppers (organic if you can find)
1 cup distilled vinegar
1 cup filtered water
1 tbsp. kosher salt
1/2 tbsp. sugar
1 clove garlic, smashed.
Instructions
1. Wash peppers thoroughly and set all your tools near you. WEAR GLOVES once you get cutting them! I use non latex kitchen disposable ones. The oils from the peppers can burn, especially if it gets into your eyes (from experience!)
2. Thinly cut jalapenos. You can either cut lengthwise to take out the seeds, then slice in half circles, or slice into full circles with the seeds in. Make sure they are all about the same size slices. Rinse under cold water; place in the jar you’ll be storing them in - an 8 oz sterilized jar is best.
3. In a large pot, mix the vinegar, water, salt, sugar and garlic. Bring to a boil. Turn off and pour this mixture into the jar where the jalapeños are. Make sure the jalapeños are all submerged.
4. After about 15 minutes, when the mix has cooled a bit, cover and let it sit on the counter until it reaches room temperature, then place in the refrigerator.
5. Note: Let is sit in the back of the fridge for about a week!! Then enjoy on all sorts of delicious dishes!!!
6. Another Note: To make the peppers less hot in flavor, add a bit more sugar.
I have a sick little girl at home today and it breaks my heart to hear her coughing non-stop. This is something easy to make and she likes it!
Homemade Cough Syrup, great for everyone in the family, kids older than 12 months.
Ingredients
* 1½ cups organic raw honey
* ½ cup organic extra virgin olive oil
* 1-5 organic lemons, juiced (the more the better)
Instructions
1. Add honey, olive oil and lemon juice to a small pot.
2. Stir.
3. Heat over medium heat just until steaming, stirring.
4. Remove from heat and let cool.
5. Place into a jar with a lid.
6. Store in the refrigerator
7. Take 1 tablespoon warmed as needed.
Notes
~TIPS~ Use as soon as you feel a cold coming on. Use as many fresh lemons as you can stand. Stir and warm before using.Use by the teaspoon or tablespoon as needed. Also great for allergies

As I type this, that little monkey is climbing on me and pulling my hair and making it challenging. The whole situation makes me reflect on what is important in life. As frustrating as it is because she doesn't really understand that me posting this is important because it will motivate someone to make some healthy choices, it puts everything into perspective. She's got her mamma back after a week away and she can't get enough and I love it. We're so tight... All I can do is thank God for keeping us all safe, and for having such a supportive husband who understands what I do and helps me so that I can do it.
Spending the weekend connecting with the ladies in my groups, having fun with my family and preparing to have a great week!
This wasn't the best workout yesterday, but got moving and felt really good afterwards! 10 hours of sleep and now I feel brand spankin' new. Sometimes it's important to do just that... ~~~ ** CAULIFLOWER HASH BROWNS!! ** ~~
1/2 cauliflower
1 egg
1/4 tsp kosher salt
1/8 tsp. black pepper
1/8 tsp. garlic powder
1/2 tsp. yellow onion, minced
1 tsp. coconut oil
HOW TO:
Grate the cauliflower head on a cheese grater to create cauliflower shreds or “rice."
Combine the shredded cauliflower with minced onion, egg, salt, pepper, garlic powder, and stir to combine.
Heat 1 tsp. coconut oil over medium-high heat.
Add half the cauliflower mixture to the pan and gently press down with a spatula to flatten, working to keep the hash brown together as much as possible.
Cook for 1 minute after the edges start to turn golden brown, about 3-4 minutes.
Carefully flip over and cook an additional 3-4 minutes to let the edges brown and the cauliflower and onion cook through.

French onion soup does not have to be the unhealthiest thing you eat. If you make it yourself you can reduce BY A TON, the amount of fat and carbs in it. This is a great recipe!!
