We have a family of four eagles that live in our backyard and my friend is housesitting and is super creeped out that Daddy Eagle is keeping a very, very close eye on her lol She sent me these photos last night
Since we are camping I thought we’d have camping themed pancakes. Dandies marshmallows, dark chocolate and gluten free graham crackers made really good s’mores pancakes. With a little coconut whip cream covered in maple syrup and chocolate. It’s a sugar lovers dream and honestly even I enjoyed it 🙌🏻

People always exclaim “wow your kids EAT all that?!” Or “You must throw away SO MUCH food!” And honestly the answer is somewhere in the middle. I’ve been making these trays since my kids were babies and they pick at them throughout the day. It’s more like a “day tray” 🤣 I pop it in and out of the fridge and whenever they want a snack, there it is! They will usually last two days in the fridge but they rarely last that long honestly.
Also, I *know* how expensive fruit is (believe me 🤦♀️) but I buy fruit instead of a lot of processed kid snacks which are also very expensive and I think it’s worth the extra. No shame or judgement on my part for anyone who prefers those snacks either. We’re all surviving out here lol

A note on portion control and calorie counting which it seems like I’ve been talking about with everyone and their grandmother lately…. Someone made a comment about losing weight after having kids and said something to the effect of “*aside* from counting calories, what else did you do?”. The assumption was that counting calories was a given … what an odd assumption. After I had my babies I ate well and gave into cravings. I also ate a *ton* of nutritious fat and vegetables. My body was recovering and making breastmilk so reducing calories was the last thing it needed. Not to mention the added stress of worrying about anything else after having had a baby. I’m a La Leche League Leader in my spare time and I encourage new moms to focus on health rather than “losing the weight” in the first year.
It is my belief that if you eat whole foods, thinking about calories is mostly a waste of time. If you are eating “junk food” then it might be worth to noting but again, everything in moderation 🤷♀️ My rule is to ask myself if my body is happy to receive this food? Carrots and peas? Yepp. Smoked tofu? Yepp. Asparagus? Yepp. Lentil rice? Yepp. Therefore the amount I eat isn’t really relevant. I eat until I’m full. I would have to eat a lot of it to be over the amount of calories I’m “supposed to” have.
I recently downloaded a calorie counter just for kicks and I’m within my recommended calories naturally because I eat mostly real food. The weird thing is that calorie counting doesn’t take into account the quality of food which I find hilarious … so I could eat a thousand calories worth of Twinkie’s per day, lose weight and be deemed a “success” lol I think it’s foolishness and we are thinking about the subject completely backwards.
Sick of bread…? Or find it too filling in the morning…? Try my chickpea pancakes and then topped them with whatever your heart desires! Today, I made a giant chickpea pancake topped with melted cheddar cheese (vegan, of course), dill sauce, fried smoked tofu, sprouts, tomato, and cucumber, and it was delicious 🤤
For some reason, this is one of those meals that people say “ but, who has the time?!” The chickpea batter is one cup chickpea, flour, one cup water, and spices lol you can make it while the grill heats up!
Our favorite burgers in this house are almost entirely made of nuts! There is a half a cup each of carrot and zucchini, one cup of oats and then seasonings. Thats it! A very healthy alternative full of good fats and they are *delicious*.
I make the mixture and then store in the fridge to use through the week. It can be made into burgers, used as crumble or taco filling or added to pasta; The options are endless 🙌🏻
This mixture goes in our Mac and cheese which seems like a daily food group around here to give it a little boost. Just blend walnuts, cashews and Brazil nuts and season with nutritional yeast, garlic powder and salt. Also great for pasta and salads!
Spent the morning making almond milk, protein chocolates, sweet tempeh and banana muffins. All before 9 AM …Could I be…. turning into a morning person?!? 🤯

So I’ve recently accomplished, my long-term goal of working out for at least one hour each day. When I mentioned this to a friend of mine, her response was…. “An HOUR… each day?!”; This prompted me to do a little math and get curious about how much time this really is. Even when accounting for travel time, it works out to be roughly 14 hours per week which is 8.33% of my weekly schedule (although sleep also accounts for *38*%!!)
So, what’s my point in posting this? That is totally doable! It’s not nearly as daunting as one hour a day sounds and if this is your goal, you can definitely do it too!! Some days I drive to town and do Aerial hoop, hot yoga, or Pilates, but other days it is just an hour of vigourous playing with the kids. I’m ashamed to admit I spend just as much time on social media 🫣 and being active is undoubtedly, much much better for my mind and body.

The struggle is real over here 🤦♀️ I’ve been trying to get my kids to eat oatmeal and I’ve tried … everything. Today I tried packaged oatmeal (meaning full of sugar but I could transition them to whole oatmeal later… maybe). I added h**p hearts and cooked sweet pears and made colorful vanilla yogurt to add for fun. Still … nope.
What are your secrets for getting kids to eat oatmeal? It’s such a good start to the day but my kids aren’t having it! Any tried and true recipes??

I spent this morning in one of my favorite places doing one of my new favorite things! I think the key to “working out” and not hating life is finding things that you truly enjoy doing and then doing those things. I can’t imagine pumping weights or running marathons but aerial hoop, hot yoga or walking while watching garbage tv are my me-time and I am grateful to be able to do it.
So this is your prompt to book the new class, or try the new activity that you might just LOVE. Your body will thank you when you’re 80 and you can still tie your shoes 💃

Today’s activity is a make your own Sundae bar 🙌🏻 The kids loved it and it took about five minutes to throw together. The kids spent *at least* 20 minutes building and eating their sundaes and I meanwhile snuck another scoop and made seconds for mom 😏 🍨
