** Wild Mushroom and Black Garlic Soup RECIPE **
(A delicious mushroom soup recipe from Merchant restaurant in Madison, WI)

PREP: 10 min COOK: 25 min TOTAL: 35 min
Yields 8-10 servings

INGREDIENTS:
6 tablespoons butter
1 cup onion, diced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Ā½ cup all-purpose flour
1 tablespoon fresh thyme leaves removed from stems
1 large bay leaf
2 quarts vegetable broth
2 pounds mushrooms coarsely chopped or sliced*
2 tablespoons black garlic, sliced
1 cup heavy cream
Ā¼ cup loosely packed fresh basil
Ā¼ cup loosely packed fresh flat-leaf parsley
*half Cremini and half other edible mushrooms, i.e. Oyster/Sh*take; white button mushrooms are not recommended.

INSTRUCTIONS:
In a large Dutch oven or heavy bottomed pot, melt butter over medium heat and add onions.
SautƩ onions for a full 10 minutes, stirring often and they will begin to brown.
Add salt, pepper, flour, thyme and bay leaf and stir to create a roux.
Cook the roux for 4 minutes, stirring often.
Add the vegetable broth 1/3 at a time, whisking as you add.
Once the mixture is creamy and all of the roux mixed into the broth, add the mushrooms and garlic.
Bring to a slight boil, reduce to a medium simmer and cook for 15 minutes, stirring often to prevent stick.
Remove and discard the bay leaf.
Add cream and heat enough to get the soup back to temperature and then add the fresh basil and parsley.
Using a blender, purƩe completely until creamy.
Adjust salt and pepper to taste as needed and serve.

Black Garlic is now becoming popular as a brain friendly super-food. Black garlic shows brain-specific benefits such as protecting neurons from neurotoxicity, which may help prevent cognitive decline and improve learning and memory retention.

Consumption of antioxidant-rich black garlic reduces the amount of oxidative stress that happens in the body, which helps prevent inflammation in the brain and damage to cells, leading to marked improvement in brain connections and blood circulation.

Did you know?ā€¦

Allicin, the primary medicinal compound that is activated when regular raw garlic is chewed raw, sliced or crushed, is not preserved if you immediately throw it in the frying pan and start cooking it. You basically destroy all the antimicrobial, antiviral and anti-inflammatory health benefits. BUT you can preserve the allicin, by letting the garlic sit for 10 minutes after you mince, chop or crush it. During this time, the maximum allicin is created and stays intact during cooking.

However, with black garlic, it is technically aged by cooking regular garlic bulbs at a consistent low temperature of anywhere between 125 and 170 degrees Fahrenheit. Although black garlic contains less allicin, the cooking process causes black garlic to contain substantially more antioxidants than raw garlic.

šŸž Toast with Avocado, Black Garlic & Soft Boiled Egg šŸ„‘

Itā€™s super simple to make, tasty, yet healthy! All you have to do is spread (must be very ripe) avocado on a piece of toast with fresh squeezed lime juice on top, add a soft boiled egg and some chopped up black garlic, and add some salt & pepper on top.

You would think that black garlic is a culinary ingredient reserved specifically for fine dining since it is pleasing to eat, considered rare and is often found only in upscale restaurants.

But this misconception would rob you of casual, everyday, culinary experiences that you could have just by adding black garlic to your food! Here are some examples:

Add it to your sandwich or spread it on a piece of toast.

Add it in an aioli for dipping purposes for french fries or yam fries.

What we eat has a huge impact on our health. Itā€™s not just the act of eating that is necessary for our survival, especially nowadays with all the processed foods readily available and convenient for busy people.

Consuming these bad foods has caused a lot of chronic diseases and conditions, such as heart disease and diabetes, which can be managed and/or prevented by eating food that provides nutrition to our bodies.

Your diet - what you eat, day in and day out is important. Whole, nutritious foods (such as our natural black garlic;) are medicine just like any other drugs, vitamins or herbal supplements prescribed to you. You have to USE it to make it work.

Although black garlic was discovered centuries ago in East Asia, it was only introduced into China in the last decade or so. As you probably know, stir fries are very popular in Chinese cuisine, and it just so happens that black garlic tastes amazing in vegetable, meat, noodle and mix stir fries.
