Tag along with me while I wing it making delicious soup! This was one of those days where I make a recipe out of what’s left in my fridge before I do my grocery shop for the week. As you can see nothing is measured.. That’s okay because soup is pretty hard to mess up! I baked the veggies at 425 F (40 mins for root veg - 20 mins for the rest). Mix liquids in a pot and slowly add in cooked veg intermittently blending with an immersion blender. Served with pumpkin seeds and a dash of cinnamon. Ingredients used: 1 small butternut squash 3 large carrots 1 small gala apple A few stalks of celery 6 cloves of garlic ½ a large white onion 2 cups of broth (i used organic chicken) 1 cup of cream (or coconut milk) 1 heaping spoon of ghee or grass fed butter (or coconut oil) Olive or Avocado oil for baking Pumpkin seeds for garnish (or maybe even cilantro or parsley!) Generous amount of seasonings: Sea salt Pepper Paprika Turmeric Cinnamon Cayenne (if you like a bit of spice) Enjoy and Thank You for watching!
