I am a foodie who developed two autoimmune diseases and changed how I cook. Now my food is not only tasty, it's health promoting too!
If you haven't tried celeriac (celery root) puree then you really must do so! This Cookidoo recipe is very easy to adapt to AIP and it is wonderfully light and smooth. The recipe is in French but if I look at it on my computer I get an adequate translation through Google.

The recipe calls for 700 g celeriac. I rarely can fit that much in my steaming basket.
Instead of cream I use chicken bone broth and coconut cream (the creamy stuff from the top of a can of coconut milk.) When I make chicken bone broth I always freeze some using this silicone half-cup tray so I have small portions for recipes like this. Omit black pepper to make it AIP compliant
I have also added parsnip to this and it is equally delicious.
This was served for my dinner last night along with a lamb burger and green salad!
If you are looking for a quick, yet delicious meal I can't think of anything better than this salad. I use Rio tuna that is packed in olive oil. Omit the black pepper and sun-dried tomatoes if you want an AIP-compliant meal. If you have them on hand you can substitute sun-cured black olives for the sun-dried tomatoes. You only need a few . In order to reduce lectins peel the zucchini/courgette and avoid the seeds by peeling ribbons only as far as the seeds. This is very tasty with zucchini but equally so with romaine lettuce. I like the crunch that romaine offers with this salad.

I prefer to make this recipe into muffins. It makes six good-sized muffins. These are made with green banana flour which is high in essential minerals and vitamins and is a good source of resistant starch and prebiotics.

Here are the Thermomix instructions for Nicole's Gingerbread Squares recipe:
Heat oven to 350°F / 176°C and line a muffin tin with parchment paper muffin cups.
Place into Thermomix MB:
Large ripe plantain, chopped
(Make sure the plantain has some black spots so that it is ripe enough. FYI It will not peel easily like a banana. Look at these instructions if you are unfamiliar with peeling a plantain - like I was!)

72 g olive oil
71 g unsweetened applesauce
80 g unsulphered blackstrap molasses
1 tsp pure vanilla extract
Blend these ingredients together. Blend 10 seconds/speed 7. Scrape down the sides of the MB and repeat if it isn't smooth and there are still chunks of plantain.
Add the following ingredients:
132 g green banana flour
40 g tapioca starch/flour
1 tsp cinnamon
2 tsp powdered ginger
1/4 tsp ground cloves
1/4 tsp salt
1 tsp baking soda
Combine these ingredients 5 seconds/speed 4.5
If necessary, scrape down the sides of the MB and mix a few seconds more.
Add 1 tsp apple cider vinegar and stir by hand. Do not overmix.
Divide batter to fill six muffin cups.
Bake for twenty minutes.
This golden milk is a sumptuous, satisfying and healthful cup of comfort. I especially like this one because of the addition of orange zest and juice. It is no surprise to me that one of my favourite Autoimmune Protocol bloggers, Kate Jay, posted this on the Autoimmune Wellness site.

Here are the Thermomix instructions so you can make it quickly and easily:
226 g coconut milk
156 g filtered water
zest and juice of one orange
1 1/2 tsp turmeric powder
1 tsp ginger powder
pinch of vanilla powder ( or 1/2 tsp vanilla extract)
pinch of salt
2 Medjool dates, finely chopped (otherwise I find the aren't blended enough into the milk)
Put all of these in MB. Blend 10 sec/speed 10
Heat 5 minutes/ 98°C/speed 2
Stir in collagen.
Serve and enjoy! 😋

This morning's breakfast included Nicole's Banana pancakes (Heal Me Delicious) with prosciutto and spiced apple compote. This is a delicious apple compote I found on another AIP blogger's website that I refer to often: Healing Family Eats. Kate suggests pairing this with her pork and chicken liver terrine, which is divine if you are into that sort of thing (although perhaps not for breakfast!) I love Kate's apple compote with pancakes as I had this morning.
You will find an earlier post where I discuss how to make the banana pancakes with the Thermomix.
To make the apple compote use all the ingredients listed in the Healing Family Eats' Spiced Apple Compote recipe using the following Thermomix instructions:
Peel, core and quarter the apples
Pit and roughly chop the dates
Put the apples and dates in the MB and chop 3 sec/speed 5.
Add the ground cinnamon, ground ginger, zest and juice of 1 lemon, and water to MB. Cook 20 minutes/ 95°C/speed 1.
I like to add a few raisins to the compote at the end but you will need to source oil-free raisins, if you want it to be AIP-compliant.
