Today I’m weighing in on the safety of other kitchen utensils: plastic, silicone, wooden and stainless steel.🙋🏻♀️

Recipe ⬇️
INGREDIENTS
1 ½ lb chicken thighs or breasts
1 egg
¼ cup cornstarch
2 tbsp flour
¼ tsp salt
3 tbsp oil of choice
SAUCE
Zest from 2 lemons
Juice from 2 lemons (1/3 cup)
2 cloves garlic minced
1 tbsp grated fresh ginger
1/2 cup brown sugar
1/4 cup soy sauce
1 cup chicken stock
1 tbsp cornstarch
INSTRUCTIONS
1. Cut either chick thighs or breasts into larger chunks and place into bowl.
2. Add egg, cornstarch, flour and salt. Mix until chicken is coated.
3. In another bowl grate lemon, squeeze lemon juice, add garlic, ginger, brown sugar, soy sauce, stock and cornstarch. Mix until smooth.
4. In a large hot skillet, add oil. Then add chicken, and stir fry until chicken is almost cooked through.
5. Remix sauce and add to chicken, cooking until sauce thickens.
6. Pour over either cooked rice or noodles. Garnish with sesame seeds, chopped green onions and sliced lemons. Enjoy!

Love caramelized onions, but hate how long they take?🧅
Try this method and you’ll have delicious onions in no time!! Details below:
INGREDIENTS
3 large onions sliced into rings
3/4 cup water
3 tbsp oil (any variety)
1/4 tsp salt
1/4 tsp baking soda
1 tbsp water
INSTRUCTIONS
1. Slice three large onions into rings
2. Add to large skillet with 3/4 cup water and 2 tbsp oil and the salt. Bring to a boil, cover and cook at high heat for about 8 minutes or just until liquid had evaporated.
3. Bring heat to medium and cook another 5-8 minutes or just until onions are browned.
4. Add 1/4 tsp baking soda to 1 tbsp water in bowl. Add to onions and cook another minute. You can add brown sugar or a little more salt if desired. Enjoy!
This lemon Italian ricotta olive oil cake is a must try! The flavours are outstanding and it’s very simple to make. 🍋

INGREDIENTS
2 lemons for zesting
¼ cup lemon juice
1 1/3 cups granulated sugar
½ cup extra virgin olive oil
3 eggs
1 cup smooth ricotta cheese
2 cups all purpose flour
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
Glaze
½ cup icing sugar
2 tbsp lemon juice
INSTRUCTIONS
1. Zest 2 lemons into a large bowl. Squeeze enough juice to make ¼ cup.
2. Add sugar, oil, eggs and ricotta cheese and whisk until smooth.
3. Add flour, baking powder, baking soda and salt and whisk until all is combined. Pour into a 9” springform pan sprayed with vegetable spray.
4. Bake at 350 F for about 30 – 35 minutes or just until tester comes out just dry, do not overbake.
5. Poke holes with a toothpick all around warm cake.
6. Mix icing sugar and lemon juice together and drizzle over top cake. Enjoy!

Better than takeout -copycat Mongolian beef stir fry.🥡

INGREDIENTS
1 lb thinly sliced beef (flank steak or stir fry strips)
3 tbsp cornstarch
2 tbsp soy sauce
1 medium red bell pepper
3 cups sugar snap peas (8 oz)
3 tbsp oil
Sauce
2 tsp sesame oil
2 large garlic cloves minced
1 tbsp grated ginger root
1/2 cup soy sauce
1 cup water
1/4 cup brown sugar
1 tbsp cornstarch
Garnish – sesame seeds and chopped cilantro
INSTRUCTIONS
1. In a bowl add thinly sliced beef and cornstarch and soy sauce.
2. Thinly slice bell pepper and cut snap peas in half.
3. In a bowl add sesame oil, garlic, ginger, soy sauce, water, brown sugar and cornstarch. Mix well.
4. In a large hot skillet, add 2 tbsp oil and stir fry meat just for a couple minutes until almost
cooked.
5. Remove meat from pan. Add remaining 1 tbsp oil and stir fry peppers and snow peas just for 2
minutes until barely cooked.
6. Add sauce and cook on medium heat until slightly thickened, then add beef and stir until
beef is cooked and coated with sauce. If sauce is too thick add more water.
7. Serve over rice and sprinkle with sesame seeds and cilantro. Enjoy!!
I was at a restaurant last night and couscous was included with my meal. Unfortunately it was so clumped together and soggy!😢Has this ever happened to you?
All I could think about was that it’s so easy to make good couscous!! So I’m resharing my go to method - perfect every time!

Sharing my recipe for the BEST grilled cheese!🤫
This version maximizes flavour and texture by coating the outside of the bread in parmesan cheese.

INGREDIENTS
2 large or 4 smaller pieces of bread of your choice
2 tbsp olive oil
1/3 cup freshly grated parmesan cheese
4 slices marbled cheddar
INSTRUCTIONS
1. Take your 2 pieces of sourdough and brush 1 side of each with 2 tbsp olive oil. Sprinkle with grated parmesan cheese.
2. Brush large pan with olive oil, place bread with the coated side down and on medium heat. Don’t touch for 3 minutes or just until bread starts to crisp.
3. Add cheese slices, cover and let cook for 2 minutes or until cheese is melted and bread on bottom is crisp. Place one slice over the other to make sandwich. Enjoy!
Whole🍊olive oil cake!
This cake comes together entirely in the food processor-how easy is that? Feel free to use the citrus of your choice! Recipe details below:
INGREDIENTS
Approximately 3 whole tangerines/ mandarins/clementines (320 gm or 12 oz)
½ cup olive oil
2 large eggs
1 ¼ cup granulated sugar
2 cups all purpose flour
1 tbsp baking powder
¼ tsp salt
Icing
1 cup icing sugar
1 tbsp either citrus juice or water
INSTRUCTIONS
1. Cut 3 medium size citrus fruits into quarters, remove seeds and purée in food processor into mashed well.
2. Add oil, eggs and blend well. Add sugar and process well, then add flour, baking powder and salt and mix just until flour is incorporated.
3. Pour into 9” springform pan, sprayed with vegetable oil and bake at 350 F between 35 – 40 minutes or just until tester comes out clean.
4. Mix icing sugar and citrus juice/ water and drizzle over cake that has been poked with holes. Enjoy!!

Sharing my recipe for cabbage rolls without all the fuss!
Instead of making individual rolls, I’ve done a casserole. Same flavours, but much easier to make! That’s always a win in my books.

INGREDIENTS
4 tbsp oil
1 large onion diced
2 large garlic cloves minced
1 lb lean ground beef
1 cup uncooked rice (of choice)
2 cups tomato pasta sauce
2 cups chicken or beef stock
10 cups thinly sliced green cabbage
2 cups grated cheddar cheese
INSTRUCTIONS
1. In a large skillet add half of the oil and onions and sauté until tender, about 5 minutes.
2. Add garlic and sauté for a minute. Add ground beef and cook just until no longer beef.
3. Add rice, tomato sauce and stock. Bring to a boil, then cover and simmer for about 15 minutes or just until rice is just tender. Add more stock if all absorbed.
4. Slice about 10 cups (1 ½ lb) of cabbage thinly.
5. In another pan add remaining oil and sauté cabbage just until tender about 5 – 8 minutes.
6. In a 9” x 13” baking dish, add half cabbage, half beef sauce, half cheese and repeat layers ending with cheese. Cover and bake at 350 F for 20 minutes. Enjoy!

INGREDIENTS
¾ cup uncooked quinoa�1 ¼ cups water�1 medium red bell pepper (diced) �3 mini cucumbers diced, or 2 cups�2 plum tomatoes, or 2 cups �1 ½ cups chopped kale �1 cup canned lentils – green or brown (drained and rinsed)�3 oz crumbled feta cheese (optional)�¼ cup olive oil�3 tbsp lemon juice�salt and pepper to taste�¼ cup chopped cilantro or basil
INSTRUCTIONS
1. Bring water and quinoa to a boil. Cover and simmer on lowest heat for 15 minutes.
2. Chop red pepper, cucumbers and tomatoes into small pieces.
3. Place into bowl along with quinoa, kale, lentils, feta, olive oil, lemon juice, salt, pepper and herbs. Mix well. And enjoy!!
