Join Chef Nasir Zuberi on a culinary journey that stretches across Pakistan's culinary landscape from Karachi to Khyber. Inspired by his mother’s kitchen, Nasir uses only fresh ingredients and homemade spice blends to bring you this unique menu of authentic Pakistani dishes rarely seen in Toronto.

Chana Papri Chaat
Chaats are a very popular street food in Pakistan and Northern India, prepared in countless different styles. They are a unique melange of favours, textures and colours: crunchy and tender, tangy and spicy, sweet and savoury, all at once. This particular combination features soft chickpeas, and crispy papri (fried wheat crackers), topped with diced fresh tomato & onion, sprinkled with a distinctive chaat masala seasoning and chutni (a tangy-sweet tamarind sauce).
Murgh Achari
This boneless chicken curry, cooked in a onion & tomato base, is seasoned with a special spice blend, achari, which is also used to make a range of fruit and vegetable ‘pickles’: spicy, chutney-like condiments. This combination of coarsely crushed fennel, mustard, nigella and fenugreek seeds adds it’s unique flavour to the curry.

Aloo Bhaji Karahi
This Pakistani-style vegetable stir fry gets its name from the karahi, the large, heavy wok-like, round iron pan it is traditionally cooked in. Green beans, potatoes, and peas are cooked with tomato and onion gravy, seasoned with a blend of roasted cumin, coriander, nigella, and mustard seeds.
Both dishes are served with aromatic basmati rice, scented with cinnamon, green cardamom and saffron, along with a cucumber and mint yogurt raita.
Khatai
These traditional cookies, a kind of shortbread, are very popular in Pakistan, usually served with tea and as dessert. These delicate, eggless cookies are enriched with almonds and ghee, and scented with fragrant cardamom.

Dal Ka Soup
Dal (lentils) are an integral part of every home in Pakistan, cooked in myriad different ways, but especially popular in winter as a warm and comforting soup. For this traditional recipe, a mix of moong & masoor dals are cooked with onion, tomato, celery, red capsicum, fresh garlic & ginger and topped with a special seasoning of roasted cumin and mint.
Murgh Hara Masala
Hara (green) masala is a distinctive green “curry” made with fresh green herbs is an exquisite dish rarely seen in restaurants. Chicken quarters are marinated overnight in yogurt, coriander, mint, green chillies, and a homemade spice blend then finished with fresh ginger
Karahi Aloo
A karahi is a type of cooking pot, sort of a thick wok, that is widely used in Pakistan; it lends its name to a variety of different dishes that are cooked in it (similar to how tagines, casseroles or paellas inherited their names). Karahi aloo (potatoes) is a vegetarian dish cooked with tomatoes, ginger & garlic with homemade freshly ground spices & garnished with fresh ginger & coriander.
Both dishes are served with matar pulao, a pilaf of basmati rice studded with green peas, scented with cinnamon, green cardamom and saffron, along with a cucumber and mint yogurt raita.
Khubani Ka Meetha
This traditional dessert is a kind of apricot “trifle” composed of a puree of dried apricots layered with vanilla custard and garnished with almonds.

Boondi are small, crispy deep fried droplets of spiced gram (chickpea) flour batter; these are soaked in yogurt with small chunks of potato and fresh tomatoes, seasoned with special chaat masala spices, roasted crushed cumin seeds, and garnished with fresh coriander. The result is crunchy & creamy, salty & sweet, savoury & fresh all at once.

A very traditional, chicken and chickpea curry that is beloved in city of Lahore. Halal chicken legs enrich a flavorful tomato-based chickpea curry prepared with a distinctive homemade spice blend and garnished with coriander and slivers of fresh ginger.

Both curries are served with aromatic basmati rice, scented with cinnamon, green cardamom and saffron, along with a small side of achaar, an intensely flavoured, spicy-sour traditional Pakistani “pickle” condiment made from limes preserved in oil with lots of spices.

There are many varieties of halwa – Besan(chickpea) flour is used to make one of the most popular ones. Combined with milk, sugar, spice & nuts, it develops a unique, nutty aroma that comes from first roasting the besan in ghee.

Nasir Zuberi, a long-time Karachi resident and caterer, has put together a delightful summer menu of authentic Pakistani dishes that showcase the cosmopolitan history of Pakistan's role in the spice trade.

Eggplant Bourani
A very old dish that can trace its history through Afghanistan and on to Persia along the ancient trade routes of the Silk Road. Slices of fried eggplant soaked in yogurt raita topped with a sizzling splash of hot oil in which cumin seeds, curry leaves, and garlic have been tempered; served with toasted pita bread.
Beef Kofta Salan
The Pakistani take on classic meatballs & gravy. Halal beef meatballs seasoned with fresh coriander, mint, green chilli & onion, cooked in a mild tomato, onion and yogurt curry seasoned with coriander, turmeric, cumin, and finished with the warm aromas of whole garam masala spices.

Lauki ka Dalcha
Bottle gourd is an underappreciated ingredient in Western cuisine, despite being one of the most ancient cultivated vegetables in the world. A common staple in Africa and Asia, in Pakistan it is often cooked with pulses for protein, like in this mild curry made with red lentils. They are simmered together in a tomato and onion based curry gravy with turmeric, chilli & cumin, and then finished with a tempering of ginger, mustard seeds & onion seeds and garnished with caramelized fried onions.
Both curries are served with an aromatic basmati rice, scented with cinnamon, green cardamom and saffron, along with a small side of achaar, a spicy-sour traditional Pakistani “pickle”; an intensely flavoured condiment made from mangos, limes, or mixed vegetables preserved in oil with lots of spices.
Sheer Khorma
Another Pakistani favourite, this rich & creamy vermicelli pudding is cooked in sweetened milk with green cardamom, and garnished with nuts & dates.
