🔥🔥🔥Delicious plant-based soup "Solyanka"😍
It is a yummy multidimensional soup that will satisfy your taste buds! 🥰

I am happy to share this recipe with you😊

You need:
- 5 medium potatoes
- 1 carrot
- 1 yellow onion
- beyond ground "meat" (plant-based meat)
- 2 tomatoes
- black olives
- lemon
- parsley
- salt, black pepper, 2 bay leaves, 5 all spices (whole round pepper)

Bring to a boil water or vegetable bullion. Cut carrots into small pieces and cut potato as you usually do for soups (not small, around 15-20mm).

Then add chopped onion and all spices:
salt, black pepper, 2 bay leaves, 5 all spices (aromatic pepper). Cook soup for around 20 minutes. Add grated tomatoes 5 minutes before your soup is done. Add parsley and remove soup from the stove.

Form balls from beyond meat and cook them in a separate pan for 10 minutes. Beyond meat has a lot of oil, and you don't want to have it in your soup. Right? So, discard the water after cooking the balls!

As you see in the picture, I didn't do the balls🙃 I just fried beyond burger and tore it apart into several pieces, and added them to the soup.

Tip: If you want to remove some fat from the cooked burger just put it in a bowl and pour boiling water on it. After 30-60 seconds remove the fatty water.

Add plant-based meatballs to the soup and serve it with black olives and a lemon wedge. You also can add a little bit of plant-based mayonnaise if you wish.

🔥🔥🔥 Apple cinnamon bagels🍎🍎🍎

Slightly sweetened with maple syrup! A great treat to enjoy with a cup of your favorite tea🥰

You need:
Flour 200 g
Vegetable oil – 60 g
Hot water – 80 g
Baking powder - 4g
Salt - a pinch

Combine sifted flour with baking powder and salt. Mix well. Add vegetable oil (odorless and tasteless), and hot water.

Mix vigorously and then knead with your hands. Cover the dough with a plastic bag and put it aside for 30 minutes at room temperature.

Prepare apple filling.

Wash and peel apples. Cut them into small cubes. Put them in a frying pan and add maple syrup and cinnamon to your taste. Cook for 10-15 minutes until apples are soft and the liquid is disappeared. Cool apples a little bit before you use them.

The fun part! Roll your dough and make your bagels!

Divide your dough into parts. Roll out a circle with a diameter of 25 cm. Use the flour if needed.
Now divide this circle into 8-12 segments. Put the filling on the wide part of the segment and roll it.

Put your bagels on a baking sheet with parchment paper in a preheated oven at 190C degrees and bake them for around 15-18 minutes. You can turn them over halfway. Baking time can vary. Depends on your oven.

Cool bagels a little bit before serving.

Enjoy these yummy bagels with a little touch of sweetness with decadent apples and aromatic cinnamon!😍🤗

🔥🔥🔥 One of my favorite oatmeal variations!

Yummy and fast!!! No need to cook! 🙂

Add boiling water to a bowl with oats (quick or medium oats). Cover with a plate and let it sit for 15-20 minutes until oats become soft.

Add plant-based milk of your choice. I usually warm up milk a little bit. Then add grated or sliced apple, banana, 2 soft dates, and a dash of cinnamon!

You also can use maple syrup instead of dates or additionally to dates🥰

All-natural sweeteners😍

Enjoy the goodness!!!

Tip: When you have cravings for something sweet, but you don't want to feel guilty afterward just make this oatmeal! It will satisfy your cravings💯

How about waffles for breakfast?😍

🔥🔥🔥 Yummy, healthy, gluten-free oat waffles to enjoy with fruits and maple syrup!🥰

Love them!😍

You can make a lot of waffles and freeze them for the days when you have cravings for something sweet. Guilt-free waffles that are good for you😊

Ingredients:
- 3 cups of oats (I use steel-cut)
- 3-4 cups of water or even more (I don't remember)
- 1 tbsp of honey or you can substitute it with maple syrup
- pinch or less of sea salt
- vanilla

Blend everything together to make a thick batter. You can add more water or more oats to reach the ideal consistency.

Now it is time to make waffles!😍 Cook time is around 11-14 minutes depending on your waffle maker.

Enjoy! Kids will love these waffles!🥰

All you need is:
- organic firm tofu
- brown rice (soak overnight before cooking for easy digestion)
- broccoli florets
- fresh vegetables to your taste (cucumber, tomato, carrots)

- green onion
- avocado

Enjoy the juice and heal your body!🥰

Red juice ingredients: carrot, apple, cucumber, celery, beet, and a little bit of lemon juice. Ginger is optional. Strain your juice and enjoy the taste!

Yellow juice ingredients: oranges. Peel oranges and put them in your juicer. Don't strain orange juice. Having a little bit of pulp in the juice will not spike your blood sugar. Drink slowly🙂

Healing fresh home-made green juice for your body and mind🥰

After the holiday season, my body is craving some light and nourishing food and drinks.

I decided to do 3-day juice fast!💪😃

However, today I changed my mind and said to myself 2 days on juices is pretty good...and I decided on the 3rd day to just go on raw food🙂 It is still gonna be amazing cleanse for my body!

Green juice ingredients: celery sticks, kale, apple, cucumber, ginger, and lemon.

🔥🔥🔥Creamy pumpkin soup with celery and parsnip roots! This is yummy autumn soup for a whole family to enjoy!
Beautiful colour, ideal creamy consistency, packed with flavours and very satisfying!

I hope you will like it too!

-1 butternut squash (average size)
-1 parsnip (average size)
-1/2 of large celery root
- 1 yellow onion
- 2 cloves of garlic
- 2-3 cm of ginger (around 2tsp freshly cut)
- 100-200 ml of coconut milk from a can (fat 18%)
- Spices: coriander, Italian herbs, turmeric, black pepper, cayenne pepper, bay leaves (2), all spices whole kernels (5-6), and salt to your taste.

Peel all the vegetables and cut them into pieces 1-2 cm. Chop garlic, ginger, and onion, and add them to the rest of the vegetables in a pot. Add water just to cover all the vegetables, bring to a boil, add all spices, and cook for 30-40 minutes or until vegetables are tender.

Then add coconut milk to a pot and bring to a boil. Remove the pot from the stove.

Important: Take out all the bay leaves and all spices kernels from the soup before you start blending vegetables. If you don’t remove bay leaves and all spices kernels, you will ruin the taste of the soup!

Blend vegetables in 2 batches, so you don’t overload your blender. Done!

Serve this soup with pumpkin seeds and coconut cream. Enjoy!

- 3-4 tbsp of green buckwheat, soaked overnight
- 2 bananas
- 0.7-1 cup of blueberry
- water

Blend everything together and enjoy the delicious breakfast!😍🥰

Remember, you can always add more water if you want to make it less sweet or you want to drink it.

Apple dessert🥰No baking required!

Grate sweet apples without skin. Add almond butter, maple syrup, puffed brown rice, and cinnamon. Mix everything well. Spread this yummy mixture in a bowl or any form you like. Sprinkle it with walnuts and add slices of fresh apple for decoration and even more nutrition!🥰

It is light and easy to make a dessert with a taste of apple pie. I hope you will enjoy it!

Do you feel like snacking on something sweet and healthy?

Try these peanut butter balls!

I usually do them by eye😊

Ingredients:
-Peanut butter
-maple syrup or Medjool dates (soft, soaked for 30 minutes before use)
-grated apple without skin or apple sauce
-puffed brown rice

Mix everything together. You can chop dates into tiny pieces or use a food processor. Form the balls.

If you want to cover them in chocolate, you can do this! Just put the balls in the freezer for 30 minutes to harden them. Melt some vegan chocolate and cover the cold balls in it. Let them sit in the fridge for about 30-60 minutes before you eat them. Of course, if you can wait!😊

You can make a lot of peanut butter balls and freeze them. So, you always have a yummy and healthy snack at hand when you need it! Enjoy!

Broccoli soup with cashew, onion, garlic, Dulse seaweed, and a little bit of salt and black pepper🥰

Put broccoli florets, onion, and garlic in a pot with water to cover vegetables. Cook for 5 minutes.
Blend half of the vegetables with cashew (soaked them 2-3 hours before using). Pour into a bowl blended soup, add 2 tbsp of lemon juice, salt, and pepper. Mix everything. Then add the rest of the vegetables and serve with fresh herbs: dill, parsley, and cilantro. Sprinkle soup with 1tsp of Dulse seaweed (any seaweed to your taste😊).

It is a light and creamy soup! Enjoy!🥰

If I cook something, I try to eat it for lunch, so for breakfast and dinner, I have mostly fresh and light foods😃

The amazing recipe I want to share with you🤩

It is a yummy smoothie with banana, blueberries, and green buckwheat (soaked overnight). You will love this smoothie😍
I promise you!

You need to wash 3-4 tbsp of green buckwheat groats and soak them overnight or at least 4 hours before eating them. Usually, I soak them in the fridge. Wash buckwheat after soaking. Now it is ready to use.

Put in a blender 2 bananas, 1 cup of wild blueberries, soaked buckwheat, and a little bit of clean water (optional). Blend everything and enjoy the delicious raw smoothie🥰

Without water, it will look like porridge. Add more water if you want to drink it🙂

I love this smoothie! It has a lot of nutritional value, delicious and filling! I hope you will enjoy it too!

My favorite raw corn soup🥰

- 1 cob of corn or about 1-1.3 cups of corn
- ¼ cup of cashew (soaked for 2-3 hours)
- 1 small garlic clove
-1/2-1 tbsp of cold-pressed olive or coconut oil
- 2tbsp of h**p seeds (soaked overnight in the fridge)
- ¼ tsp of turmeric powder
- black pepper
- laminaria or dulse (seaweed) or sea salt to your taste
- water
- herbs (cilantro, parsley, or dill)

Add everything to a blender except herbs. Pour the corn soup into a bowl and serve it with fresh herbs🙂

Blueberry smoothie with h**p seeds😍

The recipe is easy and delicious!

You need:
- 1 cup of blueberries (organic or wild are the best)
- 1 banana (you also can put a frozen banana if you wish)
- a handful of spinach or lettuce (or other greens with mild taste)
- 2tbsp of h**p seeds (soaked overnight in the fridge)
- 5-7 basil leaves
- water

Blend everything together and voila! A healthy and yummy smoothie is ready to enjoy🙂

Red lentil soup with carrot and beet🙂

Fast, yummy, and really good for you! Lentil is rich in protein.

The ingredients are below:
-half a cup of red lentil
-medium onion
-medium carrot
-small beet
-2 cloves of garlic
-3tbsp of chopped parsley
-1tbsp of cold-pressed olive oil
-seasoning and spices to your taste

The recipe is easy.

Chop yellow onion and garlic. Grate carrot and beet. Put vegetables in a pot and add seasoning and spices: little sea salt, black pepper, turmeric, cumin, coriander, and red cayenne pepper (optional).

Wash red lentils and add to the pot with vegetables. Add 1-1.5 cups of water and cook for 12-15 minutes.
Add herbs to your taste (parsley, cilantro, and dill). Cook for 1 minute or take the lentil soup from the stove to cool down. Then add fresh herbs and cold-pressed olive oil.

You can squeeze a little bit of lemon juice when you serve the soup. Enjoy!🥰

Blend 2 bananas, 2-3 tbsp of soaked flaxseeds, and clean water. Optional: you can add several mint leaves🙂
