Real Banana Pudding
This is so good I contemplated having this for
Wisk together:
1 can organic coconut milk (I get mine from Costco)
1/2 cup maple syrup (although I found this too much)
2 eggs
Put on double boiler and stur until hot. Then mix in a separate bowl
2 tbsp Corn Starch (I use Bob's Red Mill)
3 tbsp warm water
Stir and add to mixture. Stir until like yogurt.
Remove from heat and add 1 tsp vanilla and a pinch of salt. Refrigerate for 3 hrs.
