We truly believe New Brunswick Local Culinary delights are first the amazing local people (the seven chefs collaborating in the kitchen, the service and the participants!) and the variety of local food products (oysters , wagyu , lobster, snow crab, sturgeon , maple etc) and wines etc

Here is the menu for the World Chaine Day 2024 celebration at Union Club in Saint John! The world wide theme this year is "Local Culinary Delights"! 7 New Brunswick chefs and members of our Bailliage of La Chaine des Rotisseurs, each rearing a dish with local products! This will be amazing!!!

What events would you like to see organized this year? No ideas are off limits! Dinner on the beach, wine training, farm visits, nose-to-tail dinner, etc?
Last Thursday Dorina and Cornel Ceapa participated at the dinner amical and AGM of the Chaine Nova Scotia Bailliage at the Royal Nova Scotia Yacht Squadron in Halifax.
We proposed to strengthen the relationship between the two neighbouring bailliages through sharing the schedules to each other and potentially organizing a common event, most likely at Algonquin Resort, Autograph Collection for the fall induction.
Chef Ray Bear, a well known veteran of the Halifax food scene, delighted us with a great, well executed menu:
- Pumpkin Ravioli with Hazelnut Cream.
- Smoked and seared Scallop, Celeriac, Fennel Slaw with cider reduction.
- Lamb Tomahawk with jus, fermented red onion jam and Parmesan Truffle Potato
- Blueberry White Chocolate Bavarian, Passion Fruit Tart with Blueberry Ice cream and Coconut Macarooon.
Great meeting with some members of our previous bailliage, before founding the New Brunswick one!

Le 19 novembre dernier, la Confrérie de La Chaîne des Rôtisseurs, bailliage du Nouveau-Brunswick a tenu son événement d’intronisation de 8 nouveaux membres, lors d’un souper-gala organisé au Restaurant Atelier Tony de Dieppe.🧑🍳En tout, ce sont plus de 8 nouvelles personnes qui ont alors prêté serment à la Chaîne des rôtisseurs.🍽🍾
On November 19, the Brotherhood of La Chaîne des Rôtisseurs, Bailliage of New Brunswick held its induction ceremony for 8 new members, during a gala dinner organized at the Restaurant Atelier Tony in Dieppe. 🧑🍳 In all, more than 8 new people then took the oath to the Chaîne des rôtisseurs. 🍽🍾
