I'm back from a well needed break!

It's been a wild ride these past few months, but I am finally starting to feel settled into a nice routine with homeschooling and career.

I look forward to sharing more of what I've been working on with you all!

This autumn inspired cheese board/grazing platter needed its own spotlight! 🍂

cheeses: redwood, brie, habanero cheddar
meat: salami
nuts: pecans, peanuts
fruit: dried cranberries, dates, pear
veggies: bell pepper

Of course topped with edible flowers and served with a honey (from our own bees!!) cinnamon and yogurt dip!

Healthy brunch this morning to start the new month off right!

Guacamole with dill, cottage cheese with balsamic, scrambled eggs with bok choy, black pepper, & sriracha, sweet potato fries, nasturtium, and mixed greens with a coconut maple matcha latte on the side 😋

I've taken a bit of a hiatus on this account and with this side of my business. It's been a crazy couple weeks with birthdays, renovations, etc.

I've been busy busy behind the scenes working on my other business - an artisan market style store/cafe in Salmo.

It's been quite the adventure getting it all put together and as any business owner knows, we've had our fair share of setbacks - staffing issues, unreliable contractors, equipment delays, family emergencies, permitting issues, etc. BUT the project is making a lot of progress and I absolutely cannot wait to post all about it very soon. Also to be able to serve my delicious food in a retail setting - an absolute dream come true! ✨️

One of my favorite ways to eat eggs. Egg wraps. These crepe like egg wraps are just fluffy whisked egg cooked one at a time to keep them thin and roll-able.

Filled with rice, avocado hummus, spinach, cucumber, radishes, and honey mustard.

No boring salads here!

Chopped romaine, pomegranate arils, sliced beet, almond slivers, goat cheese, & chicken breast with a balsamic honey mustard dressing and lemon slice *chef's kiss*

Dressing: lemon juice, olive oil, balsamic vinegar, garlic powder, honey, sweet heat mustard

*I'll be honest, I have no measurements for this one. I just throw all of the ingredients in a bowl and combine until it tastes right.

Although today is rainy, this past week has been super sunny and warm. Warmer weather calls for fresh lemonade! 🍵🌸🍯

Lemonade Three Ways 🍋
•Matcha - 1 tsp matcha powder mixed well with 1/2 cup hot water
•Rose - 2 Tbsp rose sugar (rose petals and sugar grinded to form a blended powder)
•Honey - 2 Tbsp honey

Mixed with lemon juice, lemon slices, sweetened to taste! & of course flowers!

Experimenting with some delicious gluten/dairy free muffins in preparation for the upcoming mothers day market. I don't know how they taste yet but this rose muffin batter looks amazing!

Update: They were so good! Will definitely be making again!

Lunch today - kale salad with peas & pansies. I'm all about adding flowers to food whenever possible!

Okay this might be my new favorite drink.

Salted caramel coconut bubble tea!

•1 banana
•1 cup coconut milk
•1 avocado
•1 scoop salted caramel protein powder

Blend together in a blender or food processor.

Tapioca pearls made to product instructions.

Place 2-3 Tbsp of cooked tapioca pearls in the bottom of your cup, cover with 1/4 cup coconut milk, then pour the salted caramel shake on top.

Easy, quick, gluten free, dairy free, protein packed breakfast or snack!

Looks great, tastes amazing! 😍

Picnic in the park healthy snack platter:

•Orange slices
•Strawberries
•Snap peas
•Apple slices with lemon
•Roasted red pepper hummus with paprika & sesame seeds

It was so refreshing to be able to meet with our homeschool group yesterday and share a wonderful afternoon in the park together. Nothing better than delicious food, fresh air, sunshine, and amazing company!

Dreamy gluten & dairy free protein pancakes!

•1/2 cup oats (I use a coffee grinder to grind it into a flour consistency but that step isn't necessary)
•1/2 cup half/half coconut milk & water
•1 banana
•1 large egg
•1 scoop vanilla & greens protein powder
•1 tsp vanilla extract

The coconut milk may be substituted for any other milk & the egg could be substituted for a flax egg to make them vegan.

So easy & super yummy. If the batter seems a little too runny, you can add some additional oats or oat flour to thicken it.

Simple four ingredient matcha protein shake!

•1 frozen banana
•1 cup coconut milk
•1/2 scoop vanilla protein powder
•1/2 tsp matcha powder

Blend in food processor or blender & enjoy. Gluten free, vegan, & a great boost of plant based protein!

Turmeric, sesame, black pepper fried egg on a gluten free sourdough bagel with guacamole & alfalfa sprouts!

These turned out a bit messier than expected but the flavor was delicious.

My take on healthy Reese's cups, inspired by snickers bliss ball recipe.

•1/2 cup peanut butter
•3/4 cup packed dates - soaked for 15 minutes to soften
•1/3 cup walnuts (I was actually out of peanuts but I saw this recipe and HAD to try it - cashews would work well too as they don't affect the flavor)
•1 tsp maple syrup
•1 tsp vanilla extract
•1/4 cup coconut flour
•pinch of salt

Combine all ingredients in a food processor or high powered blender.

I pressed these into a mini muffin tin to give them the cup shape but they could easily be rolled into balls instead.

I made a sauce for the topping as I was out of chocolate chips but melted chocolate would work just fine.

For the chocolate sauce:
•1/4 cup unsweetened cocoa powder
•1/4 cup cane sugar
•pinch of salt
•1/4 cup cold water

Mix together in a saucepan on medium heat. Consistently stir until the mixture reaches a boil then stir for 1-2 minutes until the sauce thickens. Remove from heat and allow to cool slightly before covering the cups.

I sprinkled these with a pinch of bee pollen for an extra nutrient boost but crushed peanuts or other nuts would be a great topping as well.

For a protein boost, you can swap the coconut flour with your favorite protein powder.

These took me only a few minutes to make and my family and I ate the whole batch in one day 😆

Meal prep from an absolutely fantastic dinner last night!

Jalapeno cheddar pork burgers () with guacamole, sweet heat mayo, romaine lettuce, jalapenos, & alfalfa sprouts () on a gluten free sourdough bagel () served with pan roasted potatoes with fresh dill & caesar salad with fresh parmesan and gluten free croutons!

Talk about delicious & nutritious!
