Posted • .and.chips Golden fall days call for salads with a cozy twist, and this vibrant plate of juicy orange slices, soft mozzarella rounds, and green olives drizzled in rich extra-virgin olive oil is just what the season ordered. The dish is brightened with a sprinkle of Calabrian sweet pepper powder, adding a warm, aromatic heat that meets the citrusy sweetness perfectly. Fresh basil leaves scattered over give a fragrant touch, while the mild creaminess of mozzarella pulls it all together in a way that’s both satisfying and light.

These beautiful oranges came from my Eat Impact delivery. They’re all about rescuing “imperfect” fruits and vegetables—like these bright, juicy oranges—and giving them a purpose in dishes like this one. Every bite is a reminder of how powerful and delicious sustainable food systems can be!

Posted • .and.chips Delicata squash is having its moment, and these crispy, golden chips are here to prove it. This sweet, tender squash, rescued from surplus in my latest Eat Impact delivery, couldn’t be more perfect for autumn. With their gentle sweetness and creamy flesh, delicata rings turn irresistibly caramelized when baked, each chip slightly blistered and crackling with flavor.

After a good scrub, slice them into half-moons and toss with olive oil, salt, and pepper. Lay them out on a sheet, bake at 450°F until crispy, then finish with a dusting of smoked paprika. The smoky warmth gives each bite a cozy, earthy note, perfect for cool October nights. These chips are proof that seasonal eating not only celebrates the best of nature but also helps build a sustainable food system—thanks to Eat Impact’s mission to reduce waste.

The sauce, made with roasted red bell peppers from my Eat Impact box—a beautiful reminder that surplus produce deserves a second chance—offers a lush, smoky sweetness.

Blended with garlic, fresh basil, and a spoonful of cream cheese, the sauce clings luxuriously to each twist of fusilli, coating it in flavors both bold and comforting. Just a hint of red chili flakes provides a gentle warmth, while a sprinkle of Parmesan adds a delicate, nutty finish. It’s a bowl of color and depth, balancing creamy, smoky, and herbaceous notes from fresh basil leaves and flowers from my basil plant, in every bite—a true seasonal delight. Posted • .and.chips The moment I opened my Eat Impact box and spotted those golden ground cherries (aka cape gooseberries), I knew they were destined for something fresh. Their burst of natural sweetness seemed perfect for a simple yet vibrant salad. I tossed them with crisp romaine lettuce, chopped red onion, and juicy cherry tomatoes, all of which were from my Eat Impact box - each bite a beautiful contrast of textures. The sweet-tart pop from the ground cherries brought everything together.

For the dressing, I whisked together dark balsamic vinegar from Modena, Italy, olive oil, maple syrup, garlic powder, smoked paprika, and a sprinkle of salt. The tang of the vinegar and the hint of smokiness in the paprika paired so well with the fresh, sweet notes of the ground cherries. It’s the kind of salad that feels just right for this season, where the last bits of summer sunshine blend with the warmth of autumn.

Yesterday’s lunch was the perfect way to brighten up a cool, wet autumn day. 🍂🌧️ This Lettuce, Cucumber, Mango, and Smoked Tofu Salad, with a sprinkle of toasted and salted pumpkin seeds, brought just the right balance of crunch and freshness to the table.

The crisp romaine, cooling cucumber, and juicy mango from my box, paired so well with the smoky tofu. And those pumpkin seeds? A savory, crunchy addition that made each bite even more satisfying. The dressing—a warming blend of ginger, Thai curry paste, honey, sesame oil, and rice vinegar—tied it all together with a hit of tangy-sweet flavor.

✨Grapefruit with Salsa Verde✨

Yesterday’s afternoon snack was a vibrant, refreshing plate of pink grapefruit topped with a zesty salsa verde. The juicy, tart grapefruit segments burst with brightness, balancing perfectly against the salty bite of minced capers and the heat from a sprinkle of red chili flakes. The salsa verde—packed with the cap, fresh cilantro, crushed garlic, chilli flakes and a drizzle of olive oil—added an herbaceous punch that tied it all together.

It’s light, tangy, and oh-so-refreshing, the perfect balance of sweet and savory - great way to use the grapefruit from my box 👌.
