Happy St Patrick's Day!! 🍀🍀🍀🍀 The kids had green grilled cheese, kiwi, cucumbers, apples (red apples, but oh well), and green grapes. I had the rest of my chicken salad made with Paleo mayo and canned chicken, gluten free Breton crackers, cucumber, apple, grapes, and kiwi. 💚💚💚 I was going to crop out the hulk hand on the table, but it was green too, so I left it 🤷
This morning I made a plain egg omelette, put a slice of havarti, 2 peices of bacon, and a bit of salsa in the middle, and folded it up like a burrito. It was sooooo good! 🤤🤤🤤

I'm in pancake heaven 😍😍😍 these fall under the "technically compliant" category for whole30, because all of the ingredients are whole30 compliant, but it is not in the spirit of the program. But these are Paleo and Keto! They're topped with almond butter with fruit on the side. Recipe in bio!
The family is having chicken breast on a bun, so I'm having it in a lettuce bun 😊 with Paleo mayo and tomatoes, salt and pepper, and broccoli on the side. Delicious!
I'm on a Ceasar salad kick lately! For lunch we all had chicken Ceasar salad.
I am really enjoying food now that I found my balance. This is a whole wheat English muffin with havarti and egg with berries. 😍😍😍
And last night for dinner I had a gluten free pizza crust with cheese and veggies on it and a big salad. 🍕🥗
I'm not sure how many calories I'm taking in, and this certainly isn't whole30, Keto, or Paleo. But I'm happy, I'm eating healthy, there's no stress about food groups and limitations, and I'm consistently losing weight still. 🎉🎉🎉
I've taken everything I've learned about food from all the many (many) diets that I've followed, and I'm mixing it all together. I'm eating the food I enjoy in moderation, I'm filling half of my plate with fruits and veggies, I'm eating mostly gluten free, but sometimes whole grains are a part of my meal too. I get a balance of protein and healthy fats, and cheese has a place in my diet, but a serving at a time. 😊

I took the leftover mashed potatoes from the other night and fried them up with some diced onion, and plopped some over easy eggs on top. And I also have a banana with almond butter and some berries.
I don't typically weigh myself too often, but I'm not following a "diet" and I'm a little uncertain whether or not I'm eating what I need in order to lose weight, which is ultimately my goal. Not the only goal, I also want to feel good and be able to chase after my kids, too! But I am down 4lbs in the last week and a half, so I'm happy about that.
Pork chops, mashed potatoes, carrots, and green and yellow beans with gravy. Gravy is not whole30, but the rest of it is!

This morning I'm having the rest of my sweet potato hash, eggs and avocado. This is a typical breakfast for me, and the hash is super easy to prepare all at once for multiple servings. It heats up well and keeps me going until lunch 😊
Tonight for dinner I am finishing off the rest of my stuffed peppers from the other night (recipe link in my insta bio) with broccoli on the side 🤤🤤🤤

I'm enjoying a smoothie this morning for breakfast! It's made with banana, frozen mango, frozen blueberries, frozen raspberries, a bit of yogurt, cashew milk, and a bit of orange juice.
The best kind of dessert 🤤🤤🤤 and if you swipe to the next picture you'll see my stuffed peppers from last night! I had another one for dinner tonight and they reheat so well! The recipe is in a link in my bio if you want to make them. These are easy to customize to your own needs by changing it up, adding stuff, or taking stuff out.

Yesterday I boiled a dozen eggs to have easy cooked protein in the fridge. My 1yr old is still pretty needy, so when he's playing independently I prep as much as I can! I've always for cut up veggies and a source of protein ready to go. Now I have a lunch that came together in less than 5 minutes!
Scrambled eggs, strawberries, and a banana with almond butter. Working hard to make this a sustainable lifestyle so I'm not "dieting" for the rest of my life. 🙌🙌🙌
I found whole30 about 5 years ago and it changed my life. It was the first time I really felt in control of what I was putting into my body, and I felt so amazing that I did 3 back to back rounds in 2015. I was healthier than I'd ever been in my life, the number on the scale read it's lowest number since highschool. 🎉🎉🎉
But one slip and I was almost back where I was before I knew it. There was a snowball effect when I would have a cheat meal or a cheat day and then there was Christmas, a wedding etc. Food is like my drug. I relapse. I get sucked back into this dark world full of chips and candy bars. 🍫🍩🍪🧁🍭🍬🤤🤤🤤
I NEED to find my balance. My food freedom. But to be honest, I'm not sure whole30 is what I need going forward. It certainly helped me learn how to fuel my body, and showed me a bunch of new recipes and I'm grateful I found it. But I tend to be all or nothing, so maybe if I don't do "all" and have a treat once in a while, or have some gluten free crackers with lunch like yesterday, or sometimes have spaghetti for dinner, I will be happy with how I eat and not feel like I have to "eat healthy" because I already am. 🤯🤯🤯
So I'm not going to stress about food. I'm going to eat healthy because it's good for me, and if I want chips, I will have a serving of chips and leave it at that. If I wouldn't let my 7 year old eat half a bag of chips while he watches TV, why did I let myself? 🤷

I made some Paleo mayo today so I could make the canned chicken breast into chicken salad, and it's much better this way! So in my salad Ive got head lettuce, chicken salad, grapes, walnuts, and red pepper.
A simple breakfast before grocery shopping this morning. Scrambled eggs, grape tomatoes, and a banana with almond butter. I was still hungry after this so I also had an apple. I'm not actually doing whole30, just working on balance and moderation so I can model for my kids. Ice cream and cookies do have a place in a healthy balanced diet, but a small place. I had macaroni and cheese last night, but a regular portion size, paired with chicken breast, guacamole, and green beans. Everything in moderation!
I tried some canned chicken breasts from Costco today, not bad but not sure I'll buy it again. It was a bit bland, but it did the job of providing healthy easy protein.
Scrambled egg with green onion, tomato, peppers and white onions, with avocado, half an orange, and a coffee with coconut milk in my Hedwig mug. This holds an amazing 24oz of coffee, so I will be ready for my day after just one (or sometimes two) cups of coffee 😍

I love making quick omeletts using frozen peppers and onions! I don't want to use a whole pepper or onion for one omelette, and frozen is so much quicker and easier!
Well it's been a while, hasn't it?? My last few months have been insane and even though I haven't posted in a long while, I have tried my best to eat healthy during my busy time. We all know how easy it is to eat convenience foods rather than cook a good meal, so that did happen a fair bit. BUT I enjoyed my wedding anniversary, celebrated my oldest son's 7th birthday, had a fantastic Christmas and New year's, celebrated my youngest son's 1st birthday, and moved to a new house. Life happens, and it certainly happened to me! I didn't stress about my food choices, but I am ready to get back on track with my health. I'm not going to do a round of whole30 yet, but I think soon. I'm starting with whole30 breakfasts every day and take it from there. I have completed enough rounds that I can slide right back into my food freedom without doing a round, so you will see me post some "technically compliant" foods, some Paleo, some keto, and some that doesn't fall under any of those. I am finally happy with the balance of food I am putting into my body! It has taken about 10 years of yoyo dieting, followed by 5 years of off and on Whole30, but I think I'm finally there. 🎉🎉🎉
