Lani Muelrath, plant-based Fitness Expert, gives us research facts on why we definitely shouldn’t be sitting for too long.

The Audible Kitchen – St, Patrick’s Day. Irish Soda Bread.
1 cup soy milk
1 tablespoon apple cider vinegar
2 1/4 cups unbleached flour
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 350°F.
Pour the apple cider vinegar into the soy milk and set aside.
Place the flour, sugar, baking powder, baking soda and salt
in a large bowl and mix. Add the curdled soy milk (it will be lumpy!)
to the dry ingredients and mix just until it becomes doughy.
Line a baking sheet with parchment and sprinkle with flour.
If you don’t have parchment lightly grease and flour the baking
sheet. Place the dough, in a slightly flattened round shape, on the
sheet, dust with flour and mark it with a big X.
Bake for about 35 minutes. A toothpick should come out clean
and the bread should sound hollow when thumped. Place it on
a cooling rack so the bottom won’t get soft.
Enjoy with jam, nut butter, your favourite spread or with
a warm bowl of soup!

Hear Vegan Smythe’s : “Where Do You Get Your PROTEIN?”
The Audible Kitchen Valentine’s Day: Karin’s Incredible Chocolate Pie (from PETA) 25 vegan sandwich cookies
(I use Newman O’s, chocolate cookie/vanilla cream flavour)
1/2 cup melted margarine
1 1/4 pounds soft tofu
1 cup semisweet chocolate chips
Break up the cookies and place in food processor. Grind them into crumbs. Transfer to a mixing bowl and add the melted
margarine. Stir until all the crumbs are moistened.
Press the cookie mixture into a pie pan and refrigerate for a half hour.
Place the drained tofu in food processor (after you’ve cleaned out all the crumbs!) Blend the tofu until it’s smooth and creamy.
Melt the chocolate chips. I use a glass bowl and melt them in the microwave stirring them every 10 seconds. Be careful as it’s easy to burn chocolate. They can also be melted in a double boiler. Add the melted chocolate to the tofu and blend until mixed.
Pour the mixture into the pie crust and chill for at least 2 hours.

The Audible Kitchen Tofu & Vegetable Lo-Mein.
8 ounces udon Chinese noodles (or linguine)
2 teaspoons toasted sesame oil
2 teaspoons & 1 tablespoon peanut oil
8 ounces extra-firm tofu, drained and cut into 1/2 inch cubes
4 scallions, chopped
2 1/2 cups bok choy, shredded
1 small carrot, shredded
1 1/2 cups snow peas, strings removed
2 cloves garlic, minced
2 teaspoons fresh ginger, peeled and minced
3 tablespoons tamari
Cook the noodles as directed. Rinse with cold water. Place in a bowl, mix in the sesame oil and set aside.
Place 2 teaspoons peanut oil in a skillet on medium-high heat.
Drain the tofu and cut into 1/2 inch cubes. Stir-fry the cubes for about 5 minutes, turning gently until they are completely browned. Set aside.
Add 1 tablespoon peanut oil to skillet. Add the scallions and bok choy.
Stir-fry for a few minutes until the bok choy is almost soft.
Add the carrot, snow peas, garlic and ginger and stir-fry for about a minute. Add 1 tablespoon of the tamari and cook for another minute. Add the tofu, noodles and 2 tablespoons tamari.
Combine and cook for a few more minutes until it’s all heated.
Now it’s ready to serve!
Serves 4
