Sometimes those days when you are clearing all the leftovers from the fridge are the best. Today, a somewhat Mexican take on eggs Benedict. Homemade gluten free toast, with cheese and ham and a poached egg, topped with leftover Tinga de pollo instead of hollandaise. Some nice fresh avocado on the side, and you have one delicious and very filling lunch.

Every setback is a setup for a comeback. Trust in God's plan for your life. 🙌💪
