Pesto…easiest thing to make and goes with everything!
2 cups fresh basil leaves, packed
1/2 cup freshly grated Romano or Parmesan cheese
1/2 cup extra virgin olive oil
1/3 cup pine nuts
3 cloves garlic, minced
Every ingredient except the olive oil can go in your food processor...whiz is all up and then slowly add your oil. Season with salt and pepper at the end. Use fresh or freeze! 😋💜💙💪💥

Homemade Spicy Agadashi Tofu…we used the air fryer for this creation.
Drain your firm tofu well, cube and dredge in corn starch first, then in egg. Toss a few times in the air fryer at 400 degrees.
Layer the tofu on edamame and basmati rice. Use your favourite sauce! 😋💜💙💪💫💥

I’ve been spending a lot of time creating meals that are macro balanced within 2-4% of complete balance. It doesn’t take a lot of time and I enjoy the challenge! I took my go-to breakfast and adjusted the macros by adding protein powder and sliced almonds. It’s way more tasty than I imagined...Oats, yogurt, berries, chia, protein powder, almonds - YUM!
